i need help making fried rice like you get at the chinesse restarunt... i have some withe rice and probally what ever else is needed but i have no idea what to put in it or how to cook it or anything... please help...

what if the rice inst left over its from the bag i just bought and not cooked yet... is it the same as cooked insturctions... i noticed almost everyone said to used leftover rice....

You have to cook (steam) the rice before you fry it.

It is difficult to demand your fried rice looks like what you get at the Chinese restaurants, you have to put more oil into your frying pan and your stove has to be very hot + a very strong arm to throw the ingredients in air (like the Chinese chef!)

Don't expect yourself can do the same with your electrical stove (or domestic ones) in your kitchen but you may have something close to by a lot of practices.

2 bowls of cooked rice (jasmine rice is good for fried rice)
3 eggs, beat slight with salt to taste
3 tablespoons of cooking oil (or more)
green onion or chives, finely chopped

1) Heat frying pan over high heat, make sure it is very hot, add cold oil, spread around oil on pan surface, pour egg mixture into pan, stir fry quickly for 30 seconds or till half cooked.
2) Add rice into the pan, toss rice quickly and cut eggs into small piece with your Spatula, stir fry till rice is dry (if your pan is hot enough, you can see some rice jumping in your pan), add salt to taste.
3) Sprinkle green onion or chive in pan, toss to combine. Serve on plate.

I do not like to add soy sauce in my fried rice because it darken the colour of my fried rice. I like the yellowish colour more.

Good fried rice usually is oily so you can see the rice are shiny, forget about calories if you want restaurant style of fried rice.

Here is a basic recipe for fried rice that you can adapt depending on what vegetables you have on hand:

Fried Rice Recipe:
Serves 4 to 6
Ingredients:
4 cups cold cooked rice
4 tablespoons oil
3 beaten eggs
1 teaspoon salt
Pepper to taste
1 scallion, chopped fine

Directions:

Break rice apart with wet hands
Heat oil on high flame in wok. Stir-fry rice rapidly, turning spatula constantly until the rice is thoroughly heated.
Make a well in center of rice. Pour in beaten eggs. Stir eggs until they are scrambled. Then stir-fry eggs into the rice until thoroughly blended. Add salt and pepper. Stir-fry 30 seconds. Add scallion.

INGREDIENTS:
2 cups cooked Japanese rice (*left over rice is the best)
1/4 cup chopped onion
1/4 cup chopped carrot
1/4 cup chopped green pepper
1/3 cup diced ham/pork
2 eggs
1/2 tsp garlic salt
1 tsp chicken bouillon
2 tbsp soy sauce
2 tsp vegetable oil
PREPARATION:
Put a wok or a pan on high heat. Add oil to the pan. Wisk the eggs in a small bowl. Put the eggs in the heated pan and scramble very quickly. Stop the heat and remove the scrambled eggs from the pan into a dish. Put the pan on high heat and add more oil. Saute vegetables and ham until soft. Add garlic salt and chicken bouillon. Add rice and stir well. Add the scrambled egg that was cooked earlier to the rice mixture and mix together. Turn the heat down to low, add soy sauce and stir quickly. Stop the heat right away and serve.
*Makes 2 servings

The most important thing is to use rice you cooked the day before, or had left over.

Put some oil (I like sesame) in the bottom of you wok. Add some diced onion and garlic. Add soy sauce (fish sauce and a little ginger is good too). Add fine chopped carrot, mushrooms and any other veggies you want in your fried rice. Move all of that stuff around to the outer edge of your wok. Mix up an egg in a glass. Pour that into the bottom of the wok. Let it cook w/o stirring. Use your spatula to chop it into pieces once its cooked. Mix in with other ingredients again. Add finely chopped cooked ham, chicken, or even shrimp (if you want some meat in it). Mix your old rice in. Add a little more soy sauce to taste, if you like. Serve.

Ingredients:
4 cups leftover cooked long grain rice
12 ounces cooked ham, beef, pork, shrimp or chicken
salt & pepper
3 tablespoons of soy sauce
2 tablespoons Chinese bead molasses
4 tablespoons oil, preferably peanut oil
1 green pepper, cut into julienne
1 regular size can bean sprouts, drained
6 green onions, sliced
6 eggs, slightly beaten


Directions:

Heat oil in large skillet. Add the green pepper and a little salt and pepper. Fry for one minute. Loosen rice with your hands, to separate the grains, and sprinkle them into pan. When rice is hot and separated, push it to the outside edges of pan. Put the meat and green onions into center of pan. Fry them for a moment and mix them thoroughly with rice, along with soy sauce and bead molasses. Form a well in the center of rice and drop in eggs and fry them until the consistency of creamy scrambled eggs. Then mix the eggs into the rice. Finally, stir in bean sprouts. Serve with soy sauce.

This recipe for Chinese Fried Rice serves/makes 6 Okay this is traditional fried rice but you can add whatever you like to this recipe! I use this all the time and it's yummy ! good luck!

My, favorite step mother had a fried rice recipe she called Tava.
I personally loved this as a kid and still eat this because it is so good.
Take 2 cups of uncooked rice and brown it in 2 tablespoons of whatever kind of oil suits you. Add One onion and teaspoon paparika.
In a cassarole dish add 1cup diced chicken , and rice mixture , three cups chicken broth salth and pepper to taste
cover tightly
bake at 350 one hour.
This is a real good hot winter meal. I can truly recommend.

To make Just-Plain-Fried-Rice:

Take your cold left over rice and fry it in a large pan with a little dab of olive oil. When it starts to brown a little, stir in 1 egg for each 2 cups of rice. Add 1 tsp. of soy sauce for each 2 cups of rice. Add Jonny's seasoning salt to taste. Top with chopped green oinions for garnish. Enjoy!

Take (according to how much you want to make) 1 quart of water. get water to boiling add 2 cups of rice. stir once and allow to cook on medium heat (just a slight boil), cook until rice is done or fluffy. drain water, and keep until the next is ready.. preheat a skillet or pan(preferable cast iron) add oil (I like olive oil) (if you like onions) chopped onions, cut up bell peppers, 1 table spoon full of soy oil, carrots, either chopped pieces of beef, pork, or cooked chicken(chicken is best boiled)to the skillet, smallest amounts of basil, ginger,, oregano, English peas, to the skillet. scramble fry two eggs , and add to the skillet, cook until the carrots is done enough, and add rice, stiling all of them together in a large pan on medium heat until they are mixed, and tinder.
The Chinese either use soy sauce or brown rice for the flavor and color. after cooking in the skillet a large circular pan is best to combine them all in for flavor,
