They both come from the same plant, but, as with red and green peppers, the final color has to do with their ripeness. Peppercorns are the berries of the pepper plant, which is native to Southern Asia. You might be interested to know that the primary spice that Europe's explorers were seeking when they accidentally found the New World on their "shortcut" to Asia was pepper. It still accounts for a quarter of the world's spice trade.

A black peppercorn is picked when still green and dried in the sun until it turns black. A white peppercorn ripens fully on the vine before it is picked. Black pepper has a slightly hotter flavor and aroma. As with any spice, if you grind the pepper as you use it, it will have lots more flavor than if it was ground in a factory months ago and sat on the shelves in the grocery store before it sat on your shelf. So the question of how much to use is very much a matter of personal preference.

The black pepper has to season plain foods for less money, while the white pepper gets to season fancy food in nice restaurants and gets the big bucks.

Because black pepper has more taste than the white but the white one taste good too it dependes which u like more ok.

You should try some white pepper separately from the mix, it's quite good!

White pepper is easier to digest. I always liked it because I could put it in any dish I was cooking and my children never knew it was there.

It also has a milder flavor.

Same thing really, white pepper has the blackened dried husk milled off before grinding.

white pepper i ripe so it has less concentrated pepper oil in it (mild taste) but when they pick it while its black than its oils are all still fresh and strong so its taste is stronger.

White pepper is stronger and is best used it light sauces.
To prevent lumping when adding to your dish or sauce, mix it with salt or any other seasoning you're adding.
