What you are smelling is the insides of the grass, you know, basically the grass uh... blood. When the tops of the grass is cut, the liquid inside is exposed and the odor comes. In about a day, the grass tops heal and you can't smell it any more.

It is much like most garden herbs in that when it is crushed or mowed it releases the plant's fragrance. Or in your case, I would think it only smells when you light it up.

Don't know why, but I certainly do hate the smell of fresh cut grass. It drives my allergies crazy and hinders my breathing.

The grass in its natural state is non-smelling because the 'plants' innards,. (the sap of sorts),.. is enclosed inside the 'leaf',.. when the blades cut the leaf part, the 'sap' escapes and it's this that smells so strongly, (but pleasent enough).

It opens up the inside. It allows the liquid moisture whatnot to escape with the smell.
