Try and contact your local horticultural development association, they may be able to help you.
You do not say whether you have gathered them from the wild, or whether you have cultivated them if the latter, I should guard the secret well, as they have not lent themselves easily to cultivation so far, you could make a fortune.
If you have gathered them from the wild, I would think you would need some sort of expert certification as to their identification, if you wish to offer them for sale.
They dry well, so any excess you can dry, and use or sell at a later date.
I have seen advertisments in the West Highland Free Press for Wild Mushrooms required, so contacting the advertising section of that newspaper may be able to give you contact with a dealer.

Hey there,
Here you can find a nice step by step guide on how to grow mushrooms at home http://www.goobypls.com/r/rd.asp?gid=573

If you always liked mushrooms, mushroom growing is a great way to assure your family of a regular supply of this excellent food. Many people think that growing mushrooms takes some special kind of skill, or at least extremely specialized growing conditions. But this is absolutely not true. In reality, mushrooms are as easy to grow as anything else, and can be a good deal easier to grow than many kinds of food.
Bye Bye

Contact your local authority to see if they are involved in local farmers markets. If you have a lot you could get a stall, alternatvely, find a stall holder who would sell them for a small commission
