I enjoy pickling not only cucumbers but also carrots, cauliflower, cabbage and just about anything that sounds good. Buy some pickling spice in the spice aisle of your supermarket. Drops the cukes into a jar with a teaspoon or two of spice, some salt, garlic, alittle sugar, vinegar, and water. I think its 1 part water to 3 parts vinegar, but adjust it to your taste. Start off with alot vinegar then add alittle more water when the pickling process is about finished so it doesn't get too strong. Its been awhile since I've made them but it seems like a few days is all it takes. Check for pickling recipies on the internet. Some of them call for pectin to keep the veges crunchy.

Buy pickling cucumbers. They are at the farmers' market and have no wax on them.
Put them in salted water (1/4 cup salt in 2 qts water) for 4 hours.
Then, get a jar of pickles that you like, take out the pickles and put your cucumbers in there. Put the jar in the fridge for 3 days.
These will be the best pickles you ever tasted!

Freezer Pickles;
1 bunch celery
2 red sweet peppers
2 green sweet peppers
cucumbers unpeeled and sliced thinly
sweet spanish onions
2 c white vinegar
4 c white sugar
1 tsp celery seed
1 tsp mustard seed
Use enough vetables so that you have 9 to 10 quarts, make a salt water brine of 1/4 c common salt or pickling salt and enough water to cover the cut vegtables, let stand for 2 hrs,in the mean time make a syrup of vinegar, sugar, celery and mustard seed(I prefer to cook the last 4 ingredients and sieve through a cloth so that the seeds are not in pickles) cool, mix well with the drained vetables, put in jars and freeze, will keep in freezer for 1 yr.

I have an easy and yummy recipe for you. Wash cucumbers well and pat dry.
7 cups med. cucumbers sliced.(with peel on )
1 cup onions sliced thinly
1 cup vinegar
2 cups white sugar
1 tablespoon celery seed
1 tablespoon coarse salt
put cucmubers and onions in large container ( i use an ice cream pail )
Boil sugar, vinegar celery seed, salt till sugar is all disolved( but stir often so sugar does not burn) about 2 minutes.
Pour over cucs and onions. cover and refrigerate for at least 2 days. Then they are good to eat !
We call these fridge pickles, taste like bread and butter, and they keep a long time in the fridge. Can be transfered to jars after 2 days.

When making your own pickles, remember that it is hard to keep them crunchy, so they won't be just like the store bought kind. It is a canning process. They always turn out yummy, but not always crunchy. Watch for proper canning technique to avoid things like botulism. I found this recipe that seems pretty average. can't find my grandma's, for some reason, but this is real close. Extra garlic is never a bad thing, either!
