this is my mum's special recipe, but its chocolate.. hope you like it.
ingredients needed

1 1/2 cups milk
2 (1 ounce) squares unsweetened chocolate (i used cadbury)
3/4 cup white sugar (i subsitute for brown) i am a health freak
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 cups day-old bread cubes
1/2 cup chopped walnuts
3 eggs, beaten
1 teaspoon vanilla extract
Directions to bake the pudding
Preheat oven to 350 degrees F (175 degrees C).
In a double boiler, heat together the milk and chocolate until chocolate is melted.
In a 10x16 inch oven baking bag, combine 1/4 cup sugar, cinnamon and nutmeg. Mix in the bread and nuts.
Beat together the eggs, sugar and vanilla; blend together with chocolate mixture.
Place bag in 1 quart loaf pan; pour chocolate mixture over bread. Close bag with twist tie; make 6 half inch slits on top. Pour water into pan so that water comes up sides of bag, not overflowing.
Bake 50 to 60 minutes or until knife inserted comes out clean. To serve, remove from pan, cut bag away from top and put on plate.

4 eggs, slightly beaten
1/3 cup granulated sugar
1/4 teaspoon salt
1 teaspoon vanilla
3 cups milk, scalded
8 slices white bread, crusts removed
nutmeg
PREPARATION:
combine eggs, sugar, salt, and vanilla; add scalded milk. Cut bread in half diagonally, to form triangles. Arrange 2 layers of bread slices in an ungreased 8-inch square baking dish. Pour custard mixture over the bread.
Place dish in a larger baking dish containing 1/2 inch of very hot water. Bake at 325° for 30 to 35 minutes. Serve warm or cool with dessert sauce or fruit.

THIS IS THE Best
Bread slices - 3 nos
(cut the edges)
Milk - 3 cups
Eggs - 2 nos
Sugar - 4 tbsp
Vanilla essence - 1 tsp
1)Beat the eggs along with milk and sugar.
2)Take one and half cup of this beaten milk mixture in a bowl and mix the bread in it very well.
3)Steam this bread mixture for 20 to 25 minutes, until it is cooked.
4)Take a heavybased saucepan and pour the other half of the beaten milk mixture.
5)Stir it on a very low flame for 20 minutes, until this milk becomes custard.
6)Allow it to cool.
7)Add vanilla essence.
8)Keep both(pudding and custard) in refrigerator.
:- Serve cold.

Here you go - it is also called "English" style bread pudding
1 1/2 cups full-fat milk (or half and half cream)
1 1/2 cups whipping cream
2 teaspoons vanilla
8 large egg yolks
1 cup sugar (or to taste)
1/4 cup butter, softened (no subs)
1 loaf white bread (1 pound loaf, sliced into about 1/2-inch, crusts removed, use day-old bread)
1 cup raisins (can use more or less)
Set oven to 350 degrees.
Set oven rack to second-lowest position.
Prepare a 9-inch baking dish.
For the cream custard: combine the milk and whipping cream in a large heavy-bottomed saucepan; bring to a simmer; remove from heat.
In a bowl whisk together vanilla, egg yolks and 1 cup sugar (can use less sugar if desired) and blend well.
Gradually whisk in hot cream mixture into yolk mixture until well combined; set aside.
Spread 1/4 cup soft butter on bottom and sides of baking dish.
Arrange about 1/3 of the bread slices in a single layer over bottom of prepared dish (trimming to fit).
Sprinkle half of the raisins over bread.
Cover with another single layer of bread slices.
Sprinkle the remaining raisins over the bread.
Layer with remaining bread slices (you should have three layers of bread with 2 layers of raisins).
Pour the cream custard over the bread and let stand for about 5 minutes until custard is absored (about 5-6 minutes).
Position rack to second-lowest position.
Bake for about 20 minutes, or until custard thickens and begins to set.
Remove from oven and set to broil.
Sprinkle 2 tablespoons sugar over hot pudding.
Place under broiler heat for 2 minutes, or until sugar browns (rotating dish for even browning, watch closley as sugar will burn).
Serve warm.
