Someone out there must know some healthy alternatives to fast food. I don't mind going to the supermarket instead of Mc Donalds but I never have any healthy ideas for dinner when I do go. I want something with a short prep time. I think a lot of people are like me and just aren't sure what to get or can't/don't want to spend an hour cooking.

I'm looking for whole meal ideas please. I know the obvious answer would be to buy more veggies etc. but I can't eat just veggies for dinner, that's not filling!

I think the easiest way to make sure you have healthy fast options is to do a bit of prep work on the weekends.
* Go to the salad bar and buy a mix of vegetables for stir fry -- you know, onions, grated carrots, grated cabbage, chopped celery, red peppers. They've done the chopping. So stir fry the vegetables at home in olive oil, but keep them fairly crisp. Refrigerate them. Sunday brunch, omelet filled with vegetables. Monday dinner: buy a filet of white fish such as haddock, tilapia, or turbot. Heat the stir fry vegetables. When they are hot, add the fish -- it will cook quickly. One pan cleanup. Tuesday, buy a pre-baked chicken and cook some rice (or pre-cook the rice over the weekend and just microwave it.) You're eating healthy chicken and ric. Wednesday, stir fry the vegetables and add the leftover chicken.
All cooking should be done with olive oil. Coat the fish in oil and sprinkle with Paul Prudhams' Blackened Sea Food Magic. Better than most restaurants will serve.

First of all, whatever you do... DON"T BUY A COOKBOOK! This huge waste of money will find you searching for things you don't normally buy! DO, however, pick up those women's magazines in the store and thumb through for ideas. Not recipes, ideas. So you see a recipe for a roasted whole chicken with stuffing with a squash side dish and cornbread. OK, buy chicken breast, season them like the article said, or to your liking, broil it to cook it faster. Then buy frozen squah instead of making it from a whole squash. This saves you time. Just never use frozen onions- they suck. That cornbread is a good idea, but instead of covering it with butter like they did in the article, add a tablespoon of honey to your MIX and you won't need any butter at all. Use store bought when you can to speed up the process. yes, romaine lettuce is cheaper if you buy the whole head, but is the $1 going to make or break you if you buy the bag? When you get home from the store, portion things. If you bought 10 chicken breasts and you only need two a night, put them in separate baggies and freeze them. When you are ready for them, just pull them out and toss them in a sink full of hot water. In no time they will be thawed, but not microcooked. Also, try to use things like low fat sausage and cook up with peppers and onions for only about 8 minutes and serve over minute rice. That is an 8 minute meal that is so good.

I know that one answerer said not to buy a cookbook - but I do have to suggest this one that I have: Betty Crocker Good & Easy Cookbook - it is packed full of quick and healthy recipes - I truly recommend it!

I am including some really quick recipes from this cookbook in this post to you - I hope they help!:)

Pesto Tomato Toast

6 slices French Bread, 1 inch thick
1/3 cup pesto (buy in jar or refrigerated type - either one is good)
1 small tomato - chopped
1/2 cup shredded mozzerell cheese (2 oz)

heat oven to 375 degrees
Place bread on ungreased cookie sheet. Spread each slice with scant tablespoon of pesto. Top each with tomato; sprinkle with cheese. Bake about 8 minutes or until hot and cheese is melted.
6 servings

***Have a tossed salad with this and you have a meal. Also you could add some cooked, sliced chicken breast to the toast before adding tomatos and cheese.



Double Cheese Tortellini

2 cans (15 oz each) Italian style or chunky garlic and herb tomato sauce
2 packages (9 oz each) refrigerated cheese filled tortellini
1/2 cup shredded or grated Parmesan cheese

Heat tomato sauce to boiling in 3 quart saucepan. Stir in tortellini. Heat to boiling; reduce heat to medium.
Simmer 3 to 7 minutes, stirring occasionally, until tortellini is tender. Serve with cheese.
4 servings

Serve the tortellini with Pesto Vegetables:

Pesto Vegetables
1 package (16 oz) frozen brocolli, cauliflower, and carrots
1/3 cup pesto
1 tablespoon grated Parmesan cheese

Cook and drain vegetables as directed on package (do the microwave cooking directions is my suggestion)
Toss vegetables with pesto
Sprinkle with cheese
5 servings

Basically, I just put a chicken breast in a grill pan with my favorite
seasoning, grill - - micro a bowl of broccoli or any veggie with
italian dressing on it, add a side of cottage cheese. A healthy
well balanced meal in about 5 minutes or less.

If you need to save prep time, just get some frozen chicken bits, a tin of tomato chunks, and some frozen veg. Warm the veg up in minimal water, stir in the chunks later on, add spices to taste. Shove some rice or pasta in the microwave. Easy.

Instant Mashed potatoes, Canned corn, Gravy and some chicken breast fried in a little bit of olive oil...Yummy!!!

Mac & Cheese, with some fried chicken!

TV dinners

You could always have a salad on the side...

Dessert?

Ice Cream or Instant pudding...or Doughnuts!!!

Wrap sandwiches are delicious and they fill me up!

you can either cook up some chicken breast, or buy the already cooked/sliced/seasoned chicken. throw some lettuce, tomato, hot sauce and a little low fat ranch in there, wrap it up and enjoy- spicy chicken sandwich!

wrap up chicken, feta cheese, low fat ranch and olives- greek wrap!

wrap up chicken, brocolli, tomatoes and a tiny splash of lemon juice..mmm

Basically, put anything into a flavored wrap and it'll be great!

As a side, you can have some baked chips, like Lays.
