I've started adding peanuts to my rice dishes because they add up to complete proteins, but is there any real recipe that uses these ingredients?

If you like Thai or Asian food you'll have no problems!!

You can seriously use homemade peanut sauce on anything (as a dipping sauce for chicken is my personal favorite!) and you can garnish w/ peanuts/serve any of these over rice.

Peanut Sticky Rice

Just as congee is the traditional Chinese breakfast, in Vietnam it is common to start the day with a bowl of sticky rice. This recipe for peanut sticky rice consists of peanuts cooked with sweet glutinous rice and coconut milk. It includes alternate cooking directions for those who want to steam the rice.
INGREDIENTS:
1 cup raw peanuts
2 cups glutinous rice
1 cup water
1/2 cup coconut milk
1/2 teaspoon salt
1 tablespoon oil
Garnish:
1/2 cup shredded coconut
2 tablespoons crushed roasted peanuts (optional)
2 tablespoons sesame seeds (optional)
PREPARATION:
Soak raw peanuts and glutinous rice in two separate pans for at least three hours in warm water, or preferably overnight, then drain.
In a saucepan, cover peanuts with water and bring to a boil. Simmer for 20 minutes.
Using a nonstick saucepan, combine cooked peanuts, rice, water, coconut milk, salt and oil and bring to a boil.




Immediately turn down the heat and stir gently. Cover tightly, turn the heat to very low and cook until all water is absorbed - about 20 minutes. Before serving, fluff rice with chopsticks or a fork.
If using a steamer, omit water. Combine cooked peanuts, rice, peanuts, coconut milk, salt, and oil. Steam 20 minutes over boiling water.
To serve: Garnish with shredded coconut. If you wish, add crushed peanuts, sesame seeds, a little salt, and/or sugar to taste. This dish can be served by itself or with an entree. Serves 4 to 6.

JASMINE RICE WITH PEANUTS AND SCALLIONS:

2 cups jasmine rice (13 oz)
2 cups water
1 cup reduced-sodium chicken broth
1/2 cup salted roasted peanuts (2 1/2 oz), finely chopped
2/3 cup thinly sliced scallion greens

Wash rice in several changes of cold water in a bowl until water is almost clear, then drain rice well in a sieve. Bring rice, water, and broth to a boil in a 3- to 4-quart heavy saucepan, then reduce heat to low and cook, covered, until rice is tender and water is absorbed, 12 to 15 minutes. Remove from heat and let stand, covered, 5 minutes. Fluff with a fork, then stir in peanuts and scallion greens.

take 2 tbsp of oil and in this sautee 2 large onions cut into 1 inch pieces 2 green peppers cut the same way 4 cloves garlic diced....sautee til onion turn yellow then add 1 can tomatoes whole cut into pieces ...save the juice and to this add 10 cups of veggie stock 1/2 cup of brown rice about 1/2 tsp crushed red pepper salt to taste..... simmer this for about 45 minutes or until brown rice is cooked.............then when ready to serve add 3/4 cup creamy peanut butter this gives a creamy effect...garnish with crush peanuts.....oh yeah i sometimes use v.8 juice for the stock...it works fine...its ethnic background i think is african......hope helps...its different...

Cut up chicken or beef in pieces, stir fry it in a skillet with peanuts, celery, green pepper, onion, bean sprouts, some crushed red pepper, and soy sauce. Put on rice. Quick Kung Pao!

Peanut Rice

INGREDIENTS:
1 cup uncooked basmati rice
2 1/4 cups water
1/2 teaspoon salt
1/4 teaspoon ground turmeric
1/2 cup frozen petite peas, thawed
1/2 cup dry roasted peanuts

--------------------------------------------------------------------------------

DIRECTIONS:
Mix the rice, water, salt, and turmeric in a pot, and bring to a boil. Cover, reduce heat to low, and simmer 20 minutes.
Stir the peas and peanuts into the cooked rice to serve.

My aunt used to make rice balls with peanut butter. Sometimes they were wrapped in seaweed and sometimes they were sprinkled with toasted sesame seeds. Yummy!!!

No, but have you tried beans with rice? That also combines to create protein.
