Smoked fish - the cholesterol is going to be the good kind.
Almond butter on toast - it's a nice change from PB.
Vegetable fritatta from the egg beaters.

Baked beans on multigrain toast, cottage cheese on apple slices, Sardine/tuna sandwich.
