We are what we eat?
Perhaps it is not so much the food that is ingested that makes a change as it is the choice to change the food. It seems that a conscious attempt to purify oneself is more important than the actual acts which are a sign of that purification.
Yes, there are hormones and enzymes in meat which do not occur in plants. These seem to be digested and not just passed on to the human consumer.
Humans with different background belief systems have different paths to reach similar mental and emotional states. To some, the kind of food ingested is very important. To others, it is not important at all. Some might find a difference in their meditation and mental outlook, others are unaffected.
This might be no different than the conservative Christians who still do not eat meat on Fridays, or a Hebrew (who may not eat Kosher) eating Kosher during religious holidays.
What seems to be most important in direct answer to the question about Hindus, is that there does seem to be a certain "smell" to meat eaters that strict vegetarian Hindus might find offensive, especially during a "holy tour."

If you tried that before writing your question, then I think the result is obvious. Your diet will affect your writing. You will start writing tripple negatives such as "non-vegetarian" "doesn't eat" "non-veg."
To try to decipher your question I substituted "meat eater" for "non-vegetarian and non-veg" to see what I would come up with. What I got is "If a meat eater doesn't eat meat for a month, what will happen...?"
My answer is that he will be a vegetarian for a month. How that will affect him physically and medically? Well, I doubt that it will make much of a difference. I've eaten only vegetables for some periods of time (I'm retired and do sometimes experiment with diets) and didn't notice much difference--except that when I returned to meat, I felt a little more energetic. More eager to do my exercise routine.
I also noticed that I'm more easily sexually aroused by women when I'm on a meat diet. I guess that wouldn't be good during a holy tour. Maybe that's why a vegetarian diet is recommended for such tours.

Physically nothing will happen and mentally he will soon be addicted to veg food and if he likes the taste it will be loss to shop keeper from whom he buys the non veg food. Medically it is proven that veg food norishes the body and helps in de oxyidifying the body from fats and poisons

When a ocassional non -vegeterian like me avoids or stops eating nonveg for a holy month like Shravana, with continued veg intake,
the effects on me
Mentally - eleited as feeling of near to god achived by abstraining something I like very much.Thus feeling more powerful
Physically : More alert and will choose quality food so as to get required amont of calories and other proteins I used to get from meat food , like will increase the intake of Milk, Butter and Dal
Medically : More Fit if proper diet else follow the strict fast (ie no intake of food) , tiresome
Its how you see the things and how responds to other things relted to one thing that matters the most

it probably will make you physically and medically better, because it will give some extra bits that help with a healthy diet, even if its only a little. Every little helps.
It will also help the mind, as some meats are supposed to help maintain a better memory.
Overall, not a whole lot will happen, but the little bit that does will be a good thing!.

yeah of course .yoiur body and mind reflects what you eat .poision and medicine is a good example but the first one don't try for christ's sake.
what really happens is that the hindu chap will have protein deficiency and might considerable muscle tissues because of underdose of protein .which is abundant in meat and fish
it helps mentally and physically substantially if you're vegan for lifelong time.meditators and seekers don't take nonveg
but as far as hindus are concerned they are just doing for the sake of ritual .they really don't have any devotion towards god .if yes then why they'd kill a creation of god like themselves to eat.including people of other religion also
