I have a D70s and it is a fine camera. I also have a D200, which I love. The D70s has been relegated to close-ups in the office. (What a waste of a camera...) The added pixels, better color processing, and larger LCD on the D80 are worth it. The D80 looks more like a "Baby D200" than a "Big D70s."
If the extra $300 is a real pinch for you, though, don't feel bad about buying the D70s. It was yesterday's "Best Camera" and it was my dream camera when I bought it - six months before the D200 came out... I'd rather see you spend your budget on a good camera (D70s) and a great lens than see you buy a cheap lens, unless you'll be able to upgrade very soon. You can buy new lenses much easier than you can buy new cameras.

The D70s was always a good deal but since the announcement of the D80 Nikon slashed the price of the D70s, making it GREAT value for money. If you're on a limited budget, spend the $370 price difference on more or better lenses. (6 mega-pixels is plenty for an 8x10 inch print.) The biggest attractions of the D80 are the jump to 10 mega-pixels and the larger viewfinder. Both of these are welcome improvements, and the $1000 price tag is justified - but only if you can also afford good lenses to take advantage of those 10 mega-pixels.

The two main advantages of the D80 vs. the D70s are a bigger viewfinder and an extra 4MP. For me, those two improvements alone justify the price difference.
On the other hand, if your budget doesn't allow for the D80 AND the lens(es) you want, it's better to economize on the body.

Depends....
Do you have the money? Both cameras are solid. Since I'm a value shopper, I would try to snag a deal on the "closeout" D70. Since I'm not a pro, I'm pretty suer the D70 would do everything I need.
I own a D50 and could not justify spending more - but I'm not a pro.
I'm all about reasonable body + really good lens.
