Does anyone know a good recipe for buffalo chicken? I want to make some using boneless chicken breast strips....would that work?

I have found that breaded boneless chicken breast strips work the best. Wash and cut them into good size portion strips but not too big(unless you want to make a Buffalo Chicken sandwich).
Season your washed chicken strips with pepper and light salt if desired. Use Italian seasoning bread crumbs,flour first.
To make your Buffalo wing sauce,use about 3/4 franks hot sauce,(franks is the best ),and about 2 Tbl. melted butter stir in bowl with sauce and set aside.Use about a Tbl. of honey to sweeten also(stirred into sauce). Sprinkle garlic powder into sauce if desired also (lightly).
Pan fry your breaded chicken strips in olive oil,once browned and chicken is cooked ,drain and put hot strips into bowl,cover with lid and shake a few times. (that is how they do it in Buffalo Restaurants).
Once that is done,you won't be able to resist to sniff the aroma coming from the hot bowl once lid is removed(it will clear your sinuses guaranteed)..
Remove strips,ready to serve hot.,serve with celery sticks and blue cheese.
To make a Buffalo Chicken sandwich,use a bigger size chicken breast without cutting into strips,and serve on a Kaiser roll with lettuce and tomato ,mayo,and/or blue cheese.
A side of fries or onion rings with sandwich and you are on your way to becoming a true Buffalonion.
p.s...the honey in the sauce is a secret Buffalo restaurant ingredient,but don't tell anyone ..wink wink .

Yes, you can use boneless chicken breast strips if you are not into wings. There is a recipe on the label for the Franks Hot sauce which is the original recipe for Buffalo Wings, It's 1/2 cup Frank's® REDHOT® Cayenne Pepper Sauce (or more to taste)
1/3 cup butter or margarine, melted. Cook chicken first and toss the chicken with hot sauce mix.

There are two schools of buffalo wings-breaded or not. Either way will work with the boneless and I assume you know how to bread chicken. I also use the Frank's wing sauce but I cook the chicken with it already on-get more flavor that way.

Baked Buffalo Chicken Wings:

Most of us think of Buffalo wings as bar food, but with their accompaniment of celery sticks and creamy blue-cheese dressing, they make a fine casual meal. These wings are hot, but if you like them incendiary, pass extra Tabasco sauce at the table.

4 pounds chicken wings
3 tablespoons cooking oil
4 cloves garlic, chopped
1 3/4 teaspoons salt
1 1/2 teaspoons cayenne
2/3 cup mayonnaise
1/3 cup sour cream
1/4 pound blue cheese, crumbled (about 1 cup)
2 scallions including green tops, chopped
5 teaspoons vinegar
1/4 teaspoon fresh-ground black pepper
1/4 cup ketchup
1 tablespoon Tabasco sauce
8 ribs celery, cut into sticks

1. Heat the oven to 425°. In a large bowl, combine the wings, oil, garlic, 1 1/2 teaspoons of the salt, and the cayenne. Arrange the wings in a single layer on two large baking sheets. Bake until just done, about 25 minutes.

2. Meanwhile, in a medium glass or stainless-steel bowl, combine the mayonnaise, sour cream, blue cheese, scallions, 1 teaspoon of the vinegar, the remaining 1/4 teaspoon salt, and the black pepper.

3. In a large bowl, combine the ketchup, the remaining 4 teaspoons vinegar, and the Tabasco sauce. Add the wings and toss to coat. Serve the wings with the celery sticks and blue-cheese dressing alongside.

Menu Suggestions: Pair these wings with more finger food. Corn on the cob would go nicely. Roasted potato wedges are a good alternative and can be cooked alongside the wings.

Wine Recommendation: Beer is a no-brainer with the salt, spice, and heat of this barfly classic. For a more festive alternative, serve a crisp sparkling wine; it will refresh the palate and tame the heat of the dish.

SWEET HEAT BUFFALO WING SAUCE

1/2 cup of Louisiana hot sauce
2 teaspoons sugar
5-8 chicken wings


Before mixing the chicken, stir the sugar and Louisiana hot sauce together and pour over the chicken.
12 oz. Durkee red hot cayenne pepper sauce (or favorite)
8 oz. butter (can use less if you like)
1/4 tsp. garlic salt (not powder)
1/4 tsp. onion salt
About 3 lbs. wings

Combine hot sauce, butter, garlic and onion salt; mix well in a pot and warm the sauce.
Dip wings in warm sauce until coated (if sauce is cold it won't coat well). Save remaining sauce.

Cook on grill 30 to 40 minutes or until brown, turning frequently to prevent too much burning (a little makes them taste better).

Place wings in a large skillet (cast iron works best). Pour in remaining sauce, cover and simmer slowly for about 1/2 hour.

Alternate plan. Place chicken in baking dish. Pour on remaining sauce and then cover dish. Bake in oven at 350 degrees for 45 minutes.

Serve hot with a good blue cheese dressing and celery sticks. Alternate plan. Cooked wings freeze well. I usually make a large batch and freeze some. Simply reheat and eat. WARNING: The more you reheat this stuff, the hotter (i.e. spicier) it gets.

Best way is to grill them. Prepare your sauce...tomato sauce, salt, pepper, chilli powder, cumin, garlic salt or juice, I use very finely diced Thai Hot peppers but Jalapeno would do, a few drops of vegetable oil, and a dash of lemon. If you are using a grill, cover the grid with aluminum foil, spray with a vegetable oil spray or brush surface lightly with regular vegetable oil....if you are doing this in an oven, take a large square baking dish and grease it. Place your chicken strips on the grill and cook for about four minutes...turn and brush the seared side with the sauce....same for oven...turn again and repeat brushing with the sauce...continue until cooked. Note if the tomato sauce is thin, you can thicken it with tomato paste.

BUFFALO CHICKEN CHEESE DIP

3 boneless skinless chicken breast
1 jar Marzetti's blue cheese or ranch
1/4 cup Nance's buffalo wing sauce mild
1 8-oz.pkg. cream cheese softened
Tabasco sauce (optional)

Boil chicken until tender (let Cool).Then shred or chop finely. Mix together dressing and Buffalo sauce. Use Tabasco sauce to fire it up to your desire. Spread cream cheese in a 9x13 baking dish. Mix chicken in to dressing. Then pour over chicken mixture over cream cheese evenly. Bake at 350 degrees for 20 minutes. Let cool and serve with Tostitos Dips tortilla chips.

you can get texas petes hot sauce use some of that with some butter and yes you cna use boneless chickhen

u talkin bout like hot wings?? well, marinate it in hot sauce and black pepper, but it wud be better to use drumsticks
