CARAMEL SAUCE
Makes 4 servings.
1/3 cup sugar
1 1/2 tsp corn syrup
1/2 cup evaporated skim milk
1 tsp butter
Combine sugar, 2 1/2 tbsp water, and corn syrup in a medium-sized saucepan. Simmer over low heat until sugar dissolves, about 5 minutes. Continue to cook until sugar is dark in color. Slowly add milk and butter and whip briskly with wire whisk until sauce is smooth.
Caramel Sauce
Ingredients
1 can (12 ounces) Evaporated milk
2 cups milk
1/2 teaspoon baking soda
1 1/2 cups packed dark brown sugar
1/4 cup water
Directions
Heat evaporated milk, milk and baking soda to boiling; remove from heat.
Heat brown sugar and water in Dutch oven over low heat, stirring constantly, until sugar is dissolved. Add milk mixture. Cook uncovered over medium-low heat, stirring frequently, until mixture is very thick and golden brown, about 1 hour. Pour into serving bowl. Cover and refrigerate at least 4 hours.
Caramel Milk Dessert
Ingredients
1 (14 ounce) can sweetened condensed milk
3 cups milk
1/4 teaspoon cinnamon
1/4 teaspoon cloves
1/2 teaspoon baking soda
1 cup brown sugar
1/4 cup water
Directions
Combine the condensed milk, fresh milk, cinnamon, cloves, and baking soda. Bring to a boil over high heat, stirring constantly. Remove from the heat. Place the sugar and water in a saucepan. Bring to simmering point, stirring constantly until the sugar dissolves. Pour in the hot milk mixture and mix well. Cook over low heat, stirring occasionally, for 1 1/4 hours until the pudding is thick and amber coloured.
Caramelized Milk
If you need caramelized milk for a recipe or as a topping sauce, try this version using sweetened condensed milk. We do not recommend heating milk in the can.
1 (14-ounce) can NESTLÉ® CARNATION® Sweetened Condensed Milk
Directions:
FOR THE STOVETOP: Pour sweetened condensed milk into top of double-boiler pan; cover. Place over boiling water. Cook over low heat, stirring occasionally, for 60 to 75 minutes, or until thick and light caramel-colored. Remove from heat. Beat until smooth.
FOR THE MICROWAVE: Pour sweetened condensed milk into large microwave-save bowl. Cook on MEDIUM (50%) power for 4 minutes, stirring halfway through heating time. Reduce power to MEDIUM-LOW (30%) power; cook for 12 to 16 minutes, stirring with wire whisk every few minutes, until thick and light caramel-colored. Note: Microwave ovens may vary; adjust timing accordingly.
Makes 10 servings.
Caramel Topping
1/3 cup brown sugar
1 teaspoon vanilla extract
1 cup evaporated milk
Combine all ingredients. Heat until boiling. Let cool before using.
Caramel Sauce
This is delicious served with puddings, sponge cake, angel food cake or ice cream, and keeps indefinitely in the refrigerator.
1 cup granulated sugar
1/4 pound butter
1 pint milk, heated
1 1/2 cups granulated sugar
2 heaping tablespoons all-purpose flour
1 teaspoon vanilla extract
Chopped pecans or almonds (optional)
Put sugar in a cast iron skillet and stir constantly over medium-low heat until it turns a golden brown. Add butter to browned sugar and mix thoroughly. Add the hot milk and cook until the sugar is dissolved. Add the 1 1/2 cups sugar mixed with the flour. Add enough extra milk to make a smooth mixture. Add vanilla extract and cook until thick. This may be served warm or cold. Chopped pecans or chopped almonds may be served on top of this sauce.
Caramel Topping
1/3 cup brown sugar
1 teaspoon vanilla extract
1 cup evaporated milk
Combine all ingredients. Heat until boiling. Let cool before using.
CARAMEL TOPPING
Unwrap a can of Eagle Brand milk and put the can in a deep enough pot that it will completely emersed and remain that way. Bring water to a boil. Time 20 minutes. Remove can from the water and place the can in the freezer unopened.

Caramel is just sugar that's been gently heated until it melts and starts to go brown. The secret to making good caramel is to heat it really slowly and taste it often as it darkens. It quickly becomes bitter, so don't hurry things up. Try making a saturated solution of sugar in water and heating it slowly.

The really easy way is to buy Kraft caramels and melt down over a double boiler-can be thinned to desired consistency with milk.

take a can of sweetened condensed milk and put the unopened can in a large pan of water, and boil it, im not sure how long though, im sure you can find out on the web, can will not explode if you are boiling it in a pan of water.
