Fondue is a simple dish; originally it was just scraps of leftover cheese, Gruyère is best, but try mixing in Cheddar, Mozzarella, Colby or any other cheeses that melt, with white wine and a little garlic. A British dish which is similar is Welsh Rarebit, which uses tasty Cheddar instead of Gruyère, and beer instead of white wine, poured onto toast. Try adding a little Quetsch or Kirsch to your fondue. Dip crusty French bread into it.
