i was talking to the owner of this vietnamese restaurant, and she told me that she makes lasagna noodles at home using zucchini and eggplant instead of flour. like she purees them and makes some kind of dough, i guess? does anyone know how to do this? or can anyone guess? i'm going to try to do it and i can use all the wisdom i can get!

I don't know that you could use the veggies instead of flour. Veggies are wet and flour is dry. My thinking would be that instead of adding all the egg and oil and such that you just take semilina and add the zucchini to it. Mix it in the well until it forms up like pasta. You may still need to add egg to bring it together.

Id say she meant instead of plain flour she uses them grated mashed cooked or pureed in the flour for flavor like yes zucchini bread

It is probably cooked down (mashed) and water drained off or let to steam off, but I'd bet eggs and some flour are added.

Perhaps you can try steaming them and then making a puree which is of a thick consistency.

I DON'T HAVE RECIPE FOR DOUGH. BUT WANTED TO ASK IF YOU HAVE TRIED ZUCCHINI BREAD? ITS REALLY GOOD !
