Aallu paratha!This lip smackof dish can be made in two ways{according to me}....
you need, {for making 5 to 6 parathas}
5 potatoes
2 onions
4-5 cups of dough
2-3 green chilies
corinder leaves finely chopped
garam masala half spoon
chilly powder half spoon
salt to taste
Boil the potatoes in a pressure cooker for 10 min or for 5 to 6 whistles.Bring it down the flame,let it cool down.
Meanwhile,chop the onions,chilly,corrinder leaves and add the spices along with salt. Now peel the potatoes and crush it along with the above cut interegerents.Mix them well with out adding water.
Now take the dough and mix it well with the adequate amount of water.Make small balls out of the dough each.
Now,spread the small ball and make it in a round shape like you do it for roti's you may now fill the potato mixture in the center of the dough and apply a small amount of ghee or oil in the side of the dough now close it and wrap the entire thing finely again into a ball. now again spread the ball into a roti and in order that it does not stick into your hands you may apply some small amount of oil or ghee into your hands.Now heat the pan and cook the paratha on it by changing sides and applying ghee or oil on each side.
Cook it till it turns slight red and crisp.
For a easy job you may directly mix the dough along with the potato mixture and cook it in the same way.
For according to the taste you may avoid adding some of the above mentioned spices like garam masala.
Serve it hot with mango pickles,curd and tomato chuntey.....
garam masala
