i am a single woman with no roommates. i'm a pretty good cook, and a pretty healthy eater. i end up eating the same meals over and over because i (a) don't like lots of leftovers, and (b) try to use as few dishes as possible when i cook, and (c) don't have time to cook for hours. i know this is a tall request, but does anyone have any quick, no-fuss, no-mess recipes that can be made to a single serving? thanks!

Super easy for one or two, try "sausage and peppers." My husband and I love this dish. Cut up a keilbasa or other favorite sausage. For just you, I'd suggest cutting it in four. This is a very freezable sausage but is so easy to reheat. Cut up half a red pepper, half a green pepper, and a quarter of an onion. Toss it all in a frying pan and saute for about 8 minutes. Retain veggie goodness by not overcooking. I like mine over rice, and the hubby likes his with couscous. Couscous is another easy thing. This tiny semilina pasta takes on huge flavor. It takes 5 minutes and comes plain or flavored. For a quick meal, just add a little garlic, olive oil, and pepper and top with chicken or other proteins. Healthier than rice with increased fiber and protein. Try it, and I'm sure you will like it.

Also I've found that Cooking Light magazine occasionally has a section called For Two that has great healthy recipes (it used to be a regular feature a couple of years ago), I use those all the time.

I just make the dish, and freeze the leftovers, into small serving size bags. A trick I have is to cook some extra hamburger, put it into freezer bags, and take it out and add it to a single serving of spagetti, or make a couple tacos.. I open the jar of sauce, and then use it for something else too, like a dip for deep fried ravioli, or mozzarella sticks, or chip and dip..
Another is to divide up hamburger when I buy it, and make hamburger patties. Just defrost one, and you can have the hamburger, or a patty melt, or crumble it up for tacos or spagetti single servings. Or a mexican omelette
I even divide up packages of lunch meat, put enough for one or two sandwiches in a baggie, and wrap it very well, it gets freezer burnt very quickly.

INGREDIENTS:
3 ounces ground beef
1/4 (14.5 ounce) can canned diced tomatoes
1/4 (15 ounce) can kidney beans, drained
1/4 (1.25 ounce) package chili seasoning mix


DIRECTIONS:
Crumble the beef into a large skillet over medium-high heat. Cook and stir until evenly browned. Drain off grease, and mix in the tomatoes, kidney beans and chili seasoning mix. Reduce heat to medium, and simmer for 15 minutes.

Tangy Rosemary Chicken

INGREDIENTS:
1/2 pound bone-in chicken breast halves
1/4 large onion, sliced
2 tablespoons and 2 teaspoons ketchup
1 tablespoon and 1 teaspoon vinegar
1 tablespoon butter
1/4 clove garlic, minced
1/4 teaspoon dried rosemary
1/4 teaspoon salt, or to taste
1/8 teaspoon dry mustard


DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
Place chicken breasts in a 9x13 inch baking dish. Put several slices of onion on top.
In a medium saucepan over medium heat, stir in ketchup, vinegar, butter, garlic, rosemary, salt, and mustard. Bring to a boil, then pour sauce over chicken.
Bake in a preheated oven for 30 minutes. Turn chicken breasts over, and continue baking until done, about 20 to 30 minutes.

ok, have u tried looking at magazines called " "Quick cooking?" their website is: reimanpub.com.??? try them... they have some quick ideas,and sometimes,they have a feature that serves up just for two,and u can cook,and have lunch/dinner for the next day,. Most of the dishes are for 4 serving,so u can eat helathy and still have a meal later.... u can try to get archived issues,as they come out monthy,and they are at your local sunermarket. I beg hubby to let me get one now and then,and i treasure the ones I do have.... good luck!

I too am single-I just cut the amount of ingredients down. If it won't work for a certain recipe you love-freeze the rest for a quick meal when you don't want to cook at all.

curry is always good. just buy the sauce thingy in the box, boil it, and shub it in the fridge for later. it's no mess, and it's delicious. XD
