i have broc. and caul. but dunno what to cook

Break that cauliflower up into large chunks and put them on a baking sheet. Drizzle with olive oil and salt & pepper to taste and pop in a 400 degree oven for about 20 minutes or until it starts to get nice and brown. YUM!

Norwegian Cauliflower Soup

(Blomkalsuppe)
A very smooth and silken first course; serve hot to 4-6 people; a wonderful
Norwegian soup.

1 large head of cauliflower
1-1/2 quarts of boiling water
1/2 teaspoon of salt
1-1/2 Tablespoon of butter
2 Tablespoons of flour
2 egg yolks
2 Tablespoons of whipping cream (or more, to taste)
1/8 teaspoon of nutmeg
Cut the cauliflower and it into bite-size buds, but keep the stalks and trimmings
for the stock. Put the cauliflower stalks and trimmings into a large saucepan of
the boiling water and salt, then-- If you have a steaming basket--stick the steaming
basket on top and add the buds (otherwise you'll have to pick through the stuff to
fish out the buds with a slotted spoon). Cover and simmer until the buds are just
tender, then pull the basket out with the buds and cool. Continue cooking the stalks
and trimmings til they're very soft and mushy. Strain, pitch the mushy cauliflower,
and reserve the stock.

In a Dutch oven, melt the butter and stir in the flour. When smooth, stir in the hot
stock, beating constantly, then cover and simmer for 10 or so minutes. In a separate
bowl, beat the egg yolks and nutmeg into the whipping cream. Remove the soup from the
heat, then carefully and quickly whisk the egg mixture into the stock. Adjust for
seasoning and grate in some white pepper. Return the soup to the lowest possible heat,
for fear of curdling it, add the cauliflower buds, heat through, and serve immediately.

Garnish with a small sprinkling of nutmeg.

Penne with Cauliflower

1/2 c. extra-virgin olive oil
1 clove garlic, crushed and minced
4 C. canned whole tomatoes, drained and chopped
1 head cauliflower
1 lb dry penne pasta
2 bunches italian parsley-finely chopped
1/2 c. parmigiana-reggiano cheese or just Parmesan cheese

In a large saute` pan, heat the olive oil over medium-high heat and add the garlic. Cook gentely until softened and very light golden brown. Add the tomatoes and cook, stirring, until they begin to break down. Add the cauliflower and stir well. Add 1/2 cup very hot water, lower the head to medium and cook about 15-20 minutes or until the cauliflower is tender. Bring water to boil in a pot and add salt. add penne pasta and cook according to the package directions. Drain
Add the drained pasta to the pan with the cauliflower, stir in parsley. Season with salt and pepper to taste and toss for a minute over high heat
Serve with the cheese

I know this may sound fatty, but its not, in fact it is really heatlhy and really good for you, it serves 4-8 people depending on the portion size..

Cauliflower and Broccoli Bake

"Fresh broccoli and cauliflower are baked together with a thick cheese sauce!"

INGREDIENTS:
6 ounces fresh cauliflower
6 ounces fresh broccoli
2 tablespoons butter
2 1/2 tablespoons all-purpose flour
2 1/2 cups milk
1 (8 ounce) package shredded sharp Cheddar cheese
1 teaspoon English mustard
cayenne pepper to taste
salt and pepper to taste

DIRECTIONS:
Preheat oven to 425 degrees F (220 degrees C).
In a medium saucepan with enough water to cover, boil cauliflower and broccoli until tender, about 10 minutes. Drain, and transfer to a medium baking dish.

In a separate medium saucepan over low heat, melt butter, and stir in flour. Gradually whisk in milk, and increase heat to medium. As the mixture thickens, whisk in English mustard, cayenne pepper, salt and pepper. Continue whisking until a thick sauce has formed, being careful not to allow the mixture to boil. Sprinkle in 2/3 of the cheese, and stir until melted.

Pour sauce over broccoli and cauliflower. Bake in the preheated oven 30 minutes, until bubbly and lightly brown. Sprinkle with remaining cheese during the final 10 minutes of cooking.

Broccoli and Cauliflower Casserole

Broccoli and cauliflower casserole recipe with a creamy white sauce and Parmesan cheese.
INGREDIENTS:

* 2 cups water
* 1/2 teaspoon salt
* 1 1/2 to 2 pounds of broccoli and cauliflower pieces
* milk
* 4 to 5 tablespoons butter
* 4 tablespoons flour
* salt and pepper to taste
* dash nutmeg, optional
* 2 tablespoons fine dry bread crumbs
* 1 to 2 tablespoons grated Parmesan cheese
* 1/8 teaspoon paprika

PREPARATION:
In a large saucepan, bring water and salt to a boil. Add broccoli and cauliflower; cook just until crisp-tender. Drain cauliflower, reserving liquid. Add milk to the vegetable liquid to measure 2 1/2 cups.

* 1 bunch broccoli separated into flowerets
* 1 red or green bell pepper, chopped
* 1 red onion, chopped

* 1 cup mayonnaise
* 1/2 cup vegetable oil
* 1/3 cup vinegar
* 1/2 cup sugar

PREPARATION:
Mix first four ingredients together; pour dressing over and mix to blend. Make at least 2 hours in advance.

Turn vegetables into a shallow 2-quart baking dish.
Melt 3 tablespoons of butter in the saucepan over medium heat. Blend in the flour, stirring until smooth and bubbly. Gradually stir in milk mixture. Cook, stirring constantly, until thickened and smooth. Season with the salt, pepper, and nutmeg. Pour sauce over broccoli and cauliflower. Dot with remaining 1 to 2 tablespoons of butter. Combine bread crumbs, Parmesan cheese, and paprika; sprinkle over vegetables. Bake at 450° for about 20 minutes, until casserole is bubbly.
Serves 4.

I have a good breakfast idea for cauliflower. It is very easy too.

Cook caulif. in boiling water and drain (be careful not to overcook it; it has to be firm, not falling apart).
Dip cooked caulif. in beaten eggs (or only egg whites, whichever you want). Add some salt and black pepper to eggs.
Heat Little bit of oil (can be olive oil) on a skillet and cook pieces of Caulif. in it until the eggs that covering the pieces are cooked. It is very healthy, easy, and nutritious.

Cauliflower - Hmmmm, I like them mashed like potatoes! Way lower carbs and they taste good.

Broccoli? - I like Broccoli soup. It makes me think if when I was sick as a child. My daddy used to make me Broccoli soup.

I usually cook broccoli by sauteeing with garlic and butter.
Cauliflower you can do the same. Yummy!!!!!!
