Hummous is not actually Greek (although many Greeks love it), it's actually a middle eastern dish.
The flaming cheese someone mentioned is called Saganaki. Use Kefalotiri cheese (a type of Greek goat cheese), wet it, dip in flour, fry in very hot oil, put on a plate, pour over a 1/2 shot of very good rum, flame it for a minute, and put the flame out by squeezing a lemon on it. Yum!
I just fixed tonight roasted chicken with potatoes. Use lot's of oregano (Greek oregano - it's different than the oregano you buy in the grocery store), garlic and lemon.
Pastichio is kind of like a Greek lasagna with a bechemel sauce on top.
Souvlaki - diced pork sprinkled with salt, pepper, garlic and oregano, and grilled. (This is the original way to eat gyros. The gyro meat we know in the states was invented here - they don't even have it in Greece.)
Dolmades - grape leaves stuffed with meat and rice (or just rice).
Tyropita - filo dough stuffed with a mixture of cheeses.
Spanakopita - filo dough spinach and cheese "pie."
