Thought I hardly put in any, but.... hooooooah.... it is still simmering, but I'm scared to try it again, yet my guests are waiting... any suggestions???

That's a tricky one. Perhaps you can serve something with it to help neutralize the spiciness of the pilaf. Milk, bread, or fresh fruit and veggies can help. If you serve that alongside the spicy pilaf, it won't be as intense.

About the only thing I can think of is make a 2nd unseasoned batch and mix together w/ the 1st over-seasoned batch. This may bring it back to a tolerable level.
