BAKED STUFFED MARROW
2 tablespoons Vegetable Oil
1 medium Onion
300g Minced Beef
800g Marrow
1/2 teaspoon Mixed Herbs
Breadcrumbs
100ml Beef Stock
1 tablespoon Tomato Puree
Preheat the oven to 200°C (gas mk 6, 400°F). Heat the oil in a saucepan. Chop the onion finely, and cook gently for about 5 minutes until softened. Add the mince and fry for another five minutes. Add the stock, tomato puree, herbs, some freshly ground black pepper and the fish sauce, and cook until the liquid has reduced by half.
2. Meanwhile, wash and cut the marrow in half, and scoop out the seeds. Prick the inside flesh thoroughly with a fork.
3. Once the mince is browned all over, put half the mince and onion into each marrow, pouring in any juices left in the pan. Sprinkle breadcrumbs over the mince if desired.
4. Wrap each half marrow in foil and bake in a baking dish for about one hour.
5. Push back the foil to expose the tops of the marrows, and cook for a further ten minutes to brown the breadcrumbs. Serve with any juices from the dish poured back over the marrow.

Roast Bone Marrow and Parsley Salad
Ingredients
12 x 7-8cm pieces of middle veal marrowbone
1 bunch of flat-leafed parsley, picked from the stems and chopped
2 Shallots, very thinly sliced
1 modest handful of capers, (extra-fine if possible)
juice of 1 lemon
6 tbsp extra virgin olive oil
freshly ground salt and black pepper
toast, to serve
coarse sea salt
Method
1. Preheat the oven to 190ºC/Gas 5. Place the bone marrow in an oven-proof frying pan. Roast the marrow for 20 minutes until the marrow is loose and giving, but not melting away.and place in a hot oven for about 20 minutes, until the marrow is loose and giving, without melting away.
2. Mix together the parsley, shallots and capers. Make the dressing by mixing together the lemon juice and olive oil.
3. Just before serving toss the parsley mixture with the dressing and season with salt and freshly ground pepper.
4. Scrape the marrow from the bone onto the toast and season with coarse sea salt. Serve with a pinch of parsley salad on top.

Stuff it.
With mince made with onions, garlic, Provence or Italian herbs and a little tomato purée. Cook first, halve the marrow, take out the deeds, pop in the oven wrapped in foil for about 40 minutes (depending on size of marrow. Uncover for last 10 minutes and sprinkle grated Cheddar or Gruyère cheese over and let it brown.

After beef soup is cooked, we mash the bone marrow into several of the potatoes with a fork. You might add a little salt if you don't salt the soup first.

Slice it down the middle and stuff it with minced lamb, onion, garlic, tinned toms, pepper, herbs, spices. Roast in the oven grill with cheese at the end and serve with rice - yummylicious!!

If you mean a squash type marrow, bake it in the oven, if you mean like in the middle of a bone, give it to the dog.
