I used to be a Eucharistic minister quite a while ago, and my church now wants me to start doing it again. I can't seem to remember when to walk up?

The exact timing is up to the individual priest. However, you should not be anywhere near the altar until AFTER the consecration.

FYI as the liturgy translation has been going through the process of being corrected to the original Latin, the GIRM probably will be being updated as well in the near future.

FYI Eucharistic Ministers cannot and may not give blessings!!

It varies from parish to parish.

Some as early as the Lord's Prayer, others during the Sign of Peace, and others even later.

Ask your Director of Liturgy or whoever trains the Eucharistic ministers. Or go to an earlier Mass and watch.

Good for you.

I know they are not supposed to be on the altar physically when the Holy Host and Wine is being consecrated.

You may walk up after the consecration when the great Amen is being sung or spoken. If in doubt, ask your pastor when he would like you to come up.
