I am buying some various sushi to eat tomorrow for lunch. It will be stored at room temperature (in a cooler) for several hours prior. I was wondering if it will affect the quality to freeze it overnight to allow it to thaw until lunch, or if it will keep at room temperature for several hours. Please advise!!

Yes. I eat it it. I just take the extra precautions and make sure its cooked. A California roll is fully cooked as well as many others. (i crave spicy volcanos) As far as uncooked goes, a lot of times if you, not the baby, has come into contact with a parasite, your immune system can fight it. It all boils down to better safe than sorry. I really have no fears of it but still avoid raw. Just like I like wine and even though I'm told a glass is fine, I still avoid that more so than sushi.

You can't freeze it...nor should it be room temperature for several hours. You need to buy it and eat it that day for freshest quality...at most, eat it the next day only if it's been refrigerated the whole time. A cooler will not be sufficient.

It will totally affect the quality. But, on the other hand, if the people that eat it have no true respect for Japanese food, they won't know the difference.

The whole point about sushi is its freshness. To be honest, I'd even avoid leaving it in the fridge for "several" hours. 2-3 hours, maybe.

Please, give sushi a little respect.

Do not freeze sushi. It is best to eat sushi on the day of the purchase.

I wouldn't freeze sushi. It is dodgy enough eating on the day of purchase let alone freezing it and thawing it again.

you should always eat sushi fresh and never a day laster matter of factly all respectable sushi places even the stores that sell it will throw out the sushi the very next day of what they don't sell.

It will ruin it. Trust me on this. Anytime you take rice and add cold to it the texture will change. You will be disappointed. Maybe you are better off with a great gourmet sandwich instead.

Don't freeze, it will damage the substance and it might all go soggy.

Keep cool (5-10 Celcius), but do not freeze.
