How about pigs in the blanket. You take hot dogs and roll them up in crescent rolls, you can split the hot dog and add cheese or better yet buy the cheese hot dogs and bake according to the crescent roll directions. Most kids like them.

Burrito Bake. Kids LOVE it!
Fry 1 lb of hamburger meat and season with taco seasoning.
Fill (halfway) a large flour totilla shell with hamburger meat, cheese and refried beans then roll into a burrito and place in a 13 x9 casserole dish. Repeat until the dish is full of burritos.
In a seperate bowl mix together 1 can of cream of mushroom soup, 1/4 cup of milk and 3/4 jar of salsa. (optional, 1 small can of diced green chilis if you prefer a spicier meal) Pour mixture over the top of the burritos until they are saturated and then sprinkle cheese over the top. Bake in the over for 45 minutes at 350 degrees. Serve with sour cream and shredded lettuce, black olives, etc.
You can be super-liberal with this recipe. Use chicken or steak instead of hamburger, omit refried beans, add black beans, etc. Just customize it to fit your picky eater. Serve with nacho chips and you've got a hit!
PS- If your kid hates mushrooms I've not tried it but I'm sure cream of chicken would be tasty as well. The mushroom/milk/salsa concoction looks and sounds disgusting but is suprisingly GREAT! If he's into gross stuff then tell him you're having "vomit burritos".

Well, most kids will eat "Noodles Corn and Boogs" :-))
Brown some hamburger, and boil some noodles.
Get a couple cans of creamed corn.
When the meat and the noodles are cooked, grease an oven-safe casserole dish.
First, put in a few dots of butter or marg, then a layer of noodles. Dot the noodle layer with additional butter or marg, if desired.
Then add a layer of hamburger.
Then a layer of creamed corn.
Repeat.
Bake at 325 or 350 until hot. Maybe 45 minutes or so.
Serve with ketchup, if that is what the kids like.

Scotch Eggs
(4 servings) Printable Version
* 1 pound bulk pork sausage
* 1 tablespoon fresh parsley -- chopped
* 1 tablespoon grated onion
* 1/4 teaspoon ground cinnamon
* 1/8 teaspoon ground nutmeg
* 4 hard-cooked eggs -- shelled
* 1/2 cup fine dry breadcrumbs
Combine sausage, parsley, onion, cinnamon and nutmeg; mix well. Divide sausage mixture into 4 portions; shape into patties. Place one egg atop each patty, shaping the sausage mixture around egg till completely covered. Roll each sausage-covered egg in breadcrumbs. Bake in a preheated 350 degree F. oven for 15-20 minutes until golden brown.
Serve with fries or salad.

Listen to him, look him in the eye

Ummmm. You cook whatever the hell you want, your mom, its your decision. He is not the one who is going to "slave over a hot stove", you are. If he does'nt eat it to bad, But if he is hungry enough, he will eat whatever you put in front of him. Dont give into him like that, your showing that he is boss, and he probably knows it. It starts out with dinner now, soon he will be choosing how much lunch money you give him...
