Oh, fried okra! Love it and miss it so much. Can't get decent okra up here in MN! Miss my southern roots. Hon, EVERYTHING goes with okra! Fried/baked chicken, pork chops or roast, ham, turkey. Refry the leftovers and top it with white gravy and some cheese. (sigh, followed up with a bypass, but still good eats)

Where did you get decent okra???!!! Every piece I've ever bought has been woods and nasty. Please share!

What Goes With Fried Okra

My own recipe is very simple. I really want fried okra, rather than breading. Still, a little crispiness on the outside is nice. So I start by seasoning cornmeal. I always eyeball the measurements, but it's going to be about 1 cup of cornmeal, 1 tbsp kosher salt, and 2 tsp fresh-ground pepper. If I want heat, I'll add another half-teaspoon or so of cayenne. Put it in a paper bag and shake to mix. While doing that, heat the oil. Put about 1 inch of oil (a few cups) into your largest pan. Preferably cast-iron, both for tradition and because it keeps the oil hot. Heat it to 375. (If you happen to have an electric skillet that you can set to 375, that will do, too.) Peanut oil is best, but canola or vegetable oil will work, too. If you don't have a thermometer, look for the oil to just begin to smoke. (It'll look like steam, but there's no water, so it's not steam.) Next, cut the okra into half-inch slices. That's a good popping-in-your-mouth size. We need to wet the okra so the coating sticks. If you have buttermilk around, soak the okra in that for 20 minutes. You can make a buttermilk by adding 1 tbsp vinegar to 1 cup milk. If you don't want to go buttermillky, just beat a couple of eggs instead. You'll get a thicker coating. Drop the okra slices in the eggs, but they don't need to soak. Transfer a good handful of the okra to the bag, and shake. Retrieve them, shaking off the extra breading, and put them in the hot oil. Don't put in too many at once, just that handful, or the oil will cool down too much and the okra will be greasy. They'll cook up in about 4 minutes. Pull them out when they're golden brown with a skimmer. Try to clean up some of the dropped breading, or it will burn. Repeat with remaining okra. It's best served immediately, but you can hold it for a few minutes in the oven while you make up a few batches. BTW: if you have the grill heated up, you can grill the okra, too. Just drizzle olive oil and salt, and put over high heat for a couple of minutes, then turn. If you have a lot of okra you can thread them onto a pair of skewers so that they turn easily. It's a great flavor, and less messy than frying.

What doesn't go well with fried okra? That is the best thing in the world.

My favorite is fried chicken, mashed potato's, collard greens (or mustard greens), maybe even lima beans.

Fried fish (perch, tilapia or catfish) is made for fried okra.

Just think "Southern food" and you can add fried okra to that.

(I will sometimes fry some up just to snack on - MMmmmmmm)

Wash them and let it drain, cut into 1/2 inch pieces,, take a plastic bag add 3/4 cup of corn meal and 1/4 cup of flour, add okra and shake. In a Dutch stock pot add canola or vegetable (I use crisco) oil about 1/3 way up on pot, heat oil to 350 degrees, make sure to shake off any extra corn meal/flour mix and drop into hot oil, they will rise to the top when almost finished cooking, and the color your looking for is golden brown, remove from oil and place on a cookie sheet lined with paper towels or paper bag. Let them sit for a few moments to eliminate any extra oil. Then serve. You will be the hit of the BBQ.

you know what... I'd probably serve it with a pre-dinner drink ! And if you have time, I'll serve onion rings (in batter) too :-D ...
This solution would allow you to plan a different meal and gives you more freedom in terms of what you want to cook for your guests (if any)....
