Our son is off to uni on Sunday !st Oct and is keen to go with a cookie recipe (preferably choc or oatie) any fool-proof ideas?

Ingredients
350g/10½oz unsifted flour
1 tsp baking soda
1 tsp salt
225g/8oz butter
175g/6¼oz caster sugar
175g/6¼oz soft brown sugar
1 tsp vanilla extract
2 eggs
350g/12¼oz dark chocolate, crumbled



Method
1. Preheat the oven to 190C/375F/Gas 5.
2. In a bowl, combine the flour, baking soda and salt.
3. In another bowl, combine the butter, sugar, brown sugar and vanilla extract until creamy. Beat in the eggs. Gradually beat in the flour mixture. Stir in the chocolate.
4. Split the pliable dough in two halves, rolling each out into sausage shapes, approximately 5cm/2in in diameter. Wrap them in cling film and transfer to the refrigerator until ready to use.
5. When you are ready to bake the cookies, simply slice the log and lay the circles (approximately 2cm/1½in wide) on a baking tray. Bake for 9-11 minutes.
6. Serve.

2 (1-ounce) squares unsweetened chocolate
1 (14-ounce) can sweetened condensed milk
1 cup graham cracker crumbs, finely ground
1/8 teaspoon salt
1/2 cup chopped walnuts
1 teaspoon vanilla


Preheat oven to 350 degrees F.
Using a double boiler, melt the chocolate in a medium size bowl. Add the milk and stir until the mixture thickens, approximately 5 minutes. Remove the bowl from heat and add the crumbs, salt, nuts, and vanilla and stir until well combined. Work quickly as the mixture will become stiff. Using a spoon, drop the mixture into rounded teaspoons onto a prepared greased cookie sheet. Place 1/2 a walnut on top of each cookie. Place cookies in oven and bake for 10 minutes. Remove cookies from oven and quickly transfer onto waxed paper to cool.

Easy Chocolate Chip Cookies

Baking mix makes these cookies extra easy.
INGREDIENTS:
1/4 cup butter, room temperature
1 tablespoon shortening
1/2 c. brown sugar, packed
1/4 c. white sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups Bisquick® baking mix
1/4 cup quick rolled oats
1/2 cup chopped pecans or walnuts
1 cup semisweet chocolate chips
PREPARATION:
Heat oven to 375°. Cream butter and shortening with sugars; add eggs and vanilla. Beat until well combined. Stir in Bisquick, oats, nuts and ces. Drop by teaspoonful onto a greased and floured baking sheet or non stick sheet of Silpat.

Bake 10 to 15 minutes until light brown. Cool on a rack for 3 minutes; remove to rack or plate to cool completely. Makes about 36 cookies. These are easy and delicious!

Ultimate Chocolate Chip Cookies
Just like the name says, this is the chocolate chip cookie extraordinaire! Definitely one of Betty's favorites!

3/4 cup granulated sugar
3/4 cup packed brown sugar
1 cup butter or margarine, softened
1 egg
2 1/4 cups Gold Medal® all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup coarsely chopped nuts
1 package (12 ounces) semisweet chocolate chips (2 cups)


1 . Heat oven to 375ºF.
2 . Mix sugars, butter and egg in large bowl. Stir in flour, baking soda and salt (dough will be stiff). Stir in nuts and chocolate chips.
3 . Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
4 . Bake 8 to 10 minutes or until light brown (centers will be soft). Cool slightly; remove from cookie sheet. Cool on wire rack.

Use Keebler club crackers to make peanut butter sandwiches and dip them in melted chocolate chips (add a little Crisco before melting in microwave). They look nice, taste great and no baking!

go to tesco ; buy a box of tesco choc chip cookie mix and a packet of butter, take home do exactly what it says on the box and then offer to friends with the words ....I baked these my self! absolutely foolproof and delicious.
