Hi, I didn't want to get fresh pumpkin beacuse the recipe says that I would need a dehyrdrator or something and that it wouldn't taste as nice anyway because carving pumpkins aren't as nice tasting.

Make sure it's a sugar pumpkin (small pumpkin) if you are going to use fresh pumpkin and try my Mother's recipe.....

OLGA's PUMPKIN PIE:
1 cup sugar
1/2 teaspoon salt
1 1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 1/2 cups pumpkin puree, canned or fresh
1 (12 oz.) can evaporated milk
2 eggs, lightly beaten
1 unbaked pastry shell (9-inch)
Combine sugar, salt, and spices in a large mixing bowl. Add pumpkin, evaporated milk, and eggs; mix well. Pour into pastry-lined pie pan. Bake at 425 degrees for 15 minutes; reduce heat to 350 degrees and bake 40 minutes or until center is set.

The larger good supermarkets usually stock it - I have not had a problem finding it in the past but in my humble opinion it really isn't as nice as fresh pumpkin (by the way you can use any butternut squash instead and the flavour is milder and very nice). Fresh pumpkin is not hard to prepare at all...... just chop it into sizes that will fit into a saucepan with some water and simmer till tender. Drain and allow to cool enough to handle then simply scrape the flesh out and proceed with your recipe.

Can't do anything other than agree with TinyTom(?). Buy fresh pumpkins in Britain now...available until 31st October ( and after) just about everywhere in U K. Why buy canned when you can get fresh ?
