pound of fresh ground sirlion
2 heaping tblspoons of chopped garlic
2 tbspoons of minced oinions
1/2 tbspoon of montreal steak seasoning
Mix well, form into two patties, then sprinkle it with the steak seasoning.
Broil in oven until done
Serve on a fresh sourdough bun, topped with fresh leaf lettuce, red onion, tomatoe and a light pesto mayo. YUMMY

You can BBQ it and it taste really good that way also. To me the more garlic and onion the better. Of coarse I'm married so I don't have to worry about bad breath, especially since my hubby eats them too!!!

Quiche is kick *** and it's pretty much just a medley of whatever you have handy. You will need to get a frozen pie crust, but they're cheap. Just throw some eggs, cheese, and whatever meat (you could even use lunch beat or spam) or any veggies you have together and thow it in the cooked pie crust and back until firm. It's so freakin easy and good.

Tuna Corn Chowder or Chicken Corn Chowder. 2 ingredients and milk and you have a nice warm meal for these cold nights. Also it can be ready in 10 minutes.

Tuna melts. Tuna, mayo, bread/toast, cheese. Make the tuna salad; toast the bread. Slather the tuna on the open slices of bread. Put some cheese on top and microwave it until it gets bubbly.

peanut butter cookies: 1 egg 1 cup of sugar 1 cup of peanut butter. mix, roll into balls, flatten with fork. bake 10 to 12 minutes in 350 . thats all

take 2 slices of bread,put a fair amount of peanut butter on 1 slice,take a nice slice of sweet onion on top, add 2nd slice of bread . Eat &enjoy.. truthfully it is good.

APPLE CRISP:
4 cups apples, peeled and sliced
2 Tablespoons lemon juice
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 cup water
1 cup granulated sugar
3/4 cup flour
1/2 cup oatmeal
1/3 cup butter
Wash, peel, core and slice apples, toss apple slices in a bowl with lemon juice to prevent darkening. Arrange apple slices in a buttered baking dish.
In a bowl, combine cinnamon, salt and water. Sprinkle mixture over apple slices.
In another bowl combine sugar, flour and oatmeal.
Cut butter into dry ingredients. Spread crumb mixture over apple slices.
Bake at 350 degrees for 40 minutes, or until apples are tender and topping is lightly browned. Serve warm.
SUGAR COOKIES:
1/2 cup butter (softened)
1/2 cup shortening
1 cup sugar
3 eggs
1 1/2 teaspoons vanilla extract
3 1/2 cups flour
1 teaspoon baking soda
2 teaspoons cream of tartar
In a large bowl, cream butter, shortening and sugar. Add eggs and vanilla extract until light and fluffy. Sift dry ingredients together and add to butter mixture. Chill dough for 1 to 2 hours.
On a lightly floured surface, roll dough to 1/8-inch thickness. Cut with cookie cutters. Place on greased baking sheets or parchment paper. Sprinkle with colored sugar or leave plain to frost later.
Bake at 350 degrees for 5 to10 minutes or until lightly browned. Cool on wire racks.
JAM BARS:
1 1/2 cups sifted flour
1/2 teaspoon baking powder
1/2 cup butter
1/2 cup sugar
1/2 teaspoon almond extract
1 egg
3/4 cup jam or preserves
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
Sift together flour and baking powder in a small bowl and set aside.
In a large bowl cream butter, sugar and almond extract. Beat in egg thoroughly.
Add sifted dry ingredients to butter mixture and stir to blend.
Spread a little less than half the dough into a greased baking pan
(about 11 x 7 x 2 in.)
In a small bowl, mix jam with cinnamon and ground cloves. Spread over dough. Drop remaining dough in blobs over jam; spread carefully with small spatula.
Bake in hot oven at 400 degrees for about 20 minutes. Put on rack to cool; cut into squares.
ANGEL FOOD CAKE:
1 1/2 cups egg whites (10 to 12 large eggs)
1 1/2 cups sifted powdered sugar
1 cup sifted all-purpose flour
1 1/2 teaspoons cream of tartar
1 teaspoon vanilla
1 cup sugar
Step 1: Bring the egg whites to room temperature, this will take about an hour.
(Room temperature egg whites beat up fuller and fluffier, which results in a higher cake) Preheat the oven to 350 degrees. Sift powdered sugar and flour together 3 times. In a 3-quart or larger bowl beat egg whites, cream of tartar and vanilla on medium speed till soft peaks form. (tips curl) Gradually add sugar, about 2 tablespoons at a time, beating on high speed till stiff peaks form. (tips stand straight)
Step 2: Sift about one-fourth of the flour mixture over the beaten egg whites. Lightly and gently fold the flour mixture into the beaten egg whites. Repeat the sifting over and folding in of the remaining flour mixture by fourths. (Depending on the size of your bowl and the volume of egg white mixture you get, you may find the bowl gets too full as you're folding in the flour mixture. If so, transfer the mixture to a larger bowl)
Step 3: Pour the batter into an ungreased 10-inch tube pan. Use a metal spatula or knife to cut through the batter and release any large air pockets. Place cake on the lowest rack of the preheated oven. (This not only gives you room for the cake to rise, but also puts the top of the cake in the center of your oven---the best place to do any baking) Bake for 40 to 45 minutes or until the top springs back when lightly touched. (The crust of the cake will be golden and slightly cracked) Immediately invert cake in the pan, standing the tube pan on its legs or resting the center tube over a tall-necked bottle. (leave the cake in the pan) Cool the cake thoroughly. Loosen the sides of the cake from the pan; remove the cake.
To serve, use a serrated knife to slice the cake into wedges.
HOMEMADE PASTA NOODLES:
4 cups all purpose flour or semolina flour
4 eggs
1 teaspoon oil
1/2 teaspoon salt
1/8 teaspoon white pepper
6 Tablespoons cold water
Put flour on a work surface and make a deep well in the center. Break eggs into the well. With a fork, beat eggs lightly and stir in oil, 2 tablespoons of the water.
Using a circular motion, begin to draw flour from sides of well. Add 1 more tablespoon of water and continue mixing until flour is moistened. Add more water,
1 tablespoon at a time, if necessary. When dough is stiff, use hands to finish mixing.
On a clean and lightly floured surface, knead dough for 10 minutes until dough is no longer sticky or until smooth and elastic. Sprinkle dough with flour. Cover and let dough rest for 20 minutes.
Roll out 1/4 of the dough at a time to desired
thinness. Keep unrolled portion covered. When dough is all rolled, roll lengthwise this time end to end and cut into thin strips. Unwind strips and hang pasta on drying rack.
Cook in boiling water for about 10 minutes or until tender.
Note: So much easier with a PASTA MACHINE !
It rolls pasta out into sheets, and cuts pasta sheets into desired spaghetti or fettuccine widths.
POTATO PANCAKES:
6 Tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
6 medium sized potatoes, peeled and grated
1 small onion, grated
1 egg, beaten
Sift together flour, salt and pepper into small bowl and set aside. Wash, peel and grate potatoes and onions in large bowl. Stir in beaten egg. Pour dry ingredients into potato mixture and stir well until blended. Spoon mixture into hot oil in skillet and fry until brown and crispy on both sides. Drain on paper towels and serve at once with sour cream.
HOME-STYLE SCALLOPED POTATOES:
5 Tablespoons butter or margarine
5 Tablespoons all-purpose flour
1-1/4 teaspoons salt
1/2 teaspoon pepper
5 cups milk
6 cups potatoes, peeled, thinly sliced
1 onion, sliced
In a large saucepan, melt butter; stir in flour, salt and pepper until blended to make a paste. Add milk. Gradually stirring, bring to a boil; cook for 2 minutes or until sauce is thickened.
Place layer of potatoes and onions in a greased 3-qt. baking dish. Pour sauce over potatoes. Repeat layers. Bake, uncovered, at 350 degrees for 60-70 minutes or until potatoes are tender and top is lightly browned.
