I just read an article about this and I can't remember where. I mean, I was in the doctor's office when I read it, but I don't remember what magazine. Bon Appetit? Saveur? Something like that. It was about how white truffles are losing their exquisite stink.

The gist was, white truffles have never been grown successfully in any kind of cultivated situation. People have grown *black* truffles, but they're not very high quality, and they're not popular to grow. White truffles have gotten crazy expensive because even though the quality has gone way downhill, there are so few of them that people buy them anyway. And the article also said that most "truffle oil" has some pieces of total garbage truffles at the bottom of the bottle that have no flavor and the truffle flavor is synthetic. As in, made in a lab.

The article was pretty discouraging about the truffle biz. If you get the spores, it's probably a scam. Truffles are a vast underground fungus, and unless you imported a few square acres of European dirt as well, I don't know how you could coax them to grow. I don't mean to crush your dream or anything, but you'd probably be better off not trying something that all the experts have failed at. Try regular mushroom spores--you can get some cool varieties and many aren't hard to grow as long as your growing medium is good and you have good conditions for them. Good luck w/your fungus, and if you manage to get white truffles to grow, make sure you inform whatever magazine that was!
