Artichoke-Stuffed Mushrooms:
1 1/2 pounds large fresh mushrooms
1/4 cup chopped onion
2 garlic cloves, chopped
1 tablespoon olive oil
1/4 cup dry white wine
1/4 cup soft breadcrumbs
1 (14-ounce) can artichoke hearts, drained and chopped
3 green onions, chopped
1/2 cup grated Parmesan cheese
1/2 cup mayonnaise
1/4 teaspoon salt
1/4 teaspoon pepper
Rinse and pat mushrooms dry. Remove stems, and chop; reserve mushroom caps.
Sauté mushroom stems, onion, and garlic in hot oil in a large skillet over medium heat 5 minutes or until onion is tender.
Add wine, and cook 2 minutes or until liquid evaporates. Stir in breadcrumbs. Remove from heat, and let cool.
Combine onion mixture, artichoke, and next 5 ingredients. Spoon 1 teaspoonful into each mushroom cap. Place on a lightly greased rack in a roasting pan.
Bake at 350° for 12 to 15 minutes or until golden.
Yield: 25 to 30 appetizer servings

Fill inside of each cap with mixture.
Arrange in pan& add 1/2" water to pan.
Drizzle each mushroom with a drop of olive oil.
Bake 350ºF for approximatelly 25 minutes.
Serve hot.
Reheats very well.

I like to make a crab cake recipe and stuff the mushroom caps then bake at 350 degrees for 15-20 mins.
Crab Cake Mixture
1 container of crabmeat (can be regular not lump meat)
1 /2 diced onion
1/2 diced bell pepper
1 egg beaten
1/4 cup Itailan breadcrumbs
1/4 cup parmesan cheese
1 garlic clove finely minced
1/8 tsp Tobasco sauce
1/2 tsp Worcestershire sauce
2 stalks green onion finely diced
salt and pepper

Blue Cheese Stuffed Mushrooms
1 pound medium fresh mushrooms
1/4 cup sliced green onions
2 tablespoons butter
1 package (4 oz. size) crumbled blue cheese
1 package (3 oz. size) cream cheese, softened
Remove stems from mushrooms, chop stems. Cook and stir stems and onions in butter until tender. Add bluecheese and cream cheese; mix well. Spoon evenly into mushroom caps. Place on rack of broiler pan. Broil 2 to 3minutes or until golden brown. Serve hot.

Creamy Pasta Primavera 4 ounces spaghetti 1/3 cup butter, divided 1/2 cup chopped green onions 1/4 cup sliced green bell pepper 1/4 cup sliced red bell peppers 1 (4 ounce) can mushrooms, drained 3/4 cup milk 1 (8 ounce) package cream cheese 2 cups diced cooked ham 1/3 cup grated Parmesan cheese Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. In a skillet, melt 1/4 cup of the butter. Saute green onions, green peppers, red peppers and mushrooms. Add cream cheese and milk and stir over low heat until cream cheese is melted. Stir in ham and parmesan cheese. Toss spaghetti with remaining butter. Combine with cream cheese mixture; toss lightly.

if you like seafood cut the stem off a whole mushroom place in baking pan with a Little butter put crab in mushroom with cheese cook and yummy if you do not like seafood do same thing but use ground up steak and cheese also you can use the large flat mushrooms 4 inches round slice of tomato and then stuffing with cheese on top

4 lg mushrooms per person

Mix together 1/2 # shredded Cheddar, one package cooked stouffers spinach souffle, chopped stems, 1/4 tsp cayenne pepper
Pile stuffing into caps, lay bacon over each one
Bake 350 for 30 min
3 min under broiler
