Here are some:
Southern Fried Chicken
4 fresh bone-in, skin-on chicken half-breasts (approximately 1 lb. each), halved
2 C. self-rising flour
2 T. kosher salt
1 T. white pepper
2 t. paprika
1 pint buttermilk
Solid vegetable shortening for deep-frying, approximately 6 cups.
Put the chicken into a deep bowl. Season with 1/2 T. of the salt and 1 t. of the pepper. Add the buttermilk. Cover and refrigerate for 30 minutes.
While the chicken is soaking, thoroughly combine the flour, the remaining 2 T. salt, 2 t. white pepper and the paprika in a quart-sized resealable plastic bag. Set aside.
Transfer the chicken to a sheet pan and let air-dry for 20 minutes.
Begin heating the shortening in large cast-iron skillet until it reaches 325° F.
When the oil is ready, add one chicken half-breast at a time to the seasoned flour. Lightly coat with flour and carefully place skin-side down in the hot oil. Cook for 10 minutes, then turn and cook for 10 minutes longer. Give the chicken two more turns, approximately 5 minutes on each side. Fry until the juices run clear and the meat inside is no longer pink.
Serves 4.
SIMPLE SOUTHERN FRIED CHICKEN
1 frying chicken, skin removed if you
want lower fat. I leave the skin on.
3 teaspoons Lawry's Seasoned Salt
2 garlic cloves, finely chopped
1 cup all purpose flour
1 cup vegetable oil
1. Season chicken with all seasonings.
2. Roll chicken in flour until covered. Shake off
excess flour. Sprinkle additional seasoning.
3. Simply fry chicken in frying pan until golden
brown. I like it crispy so I cook it a little longer
than most.
You can start out with the oil very hot and then
reduce it later. This seals in the moisture and
flavor, then cooks it.

I have done the flour egg route and it's good but I fry it in a cast iron skillet for the first 20-30 min. Then put it in the oven for another 20-30 depending on the size of the peices. Season with garlic salt, paprika, poultry seasoning and parsley. Also my kids like what they call crispy chicken, basically the same exepct instead of flour use smashed corn flakes.

In a plastic bag with flour and herbs and spices. shake well, deep fry for 1 or 2 minutes and finish the cooking in the oven .

Southern-Fried Stuffed Chicken with Roasted Red Pepper-and-Vidalia Onion Gravy:
4 ounces cream cheese, softened
1 cup dry chicken-flavored stuffing mix
1/2 cup (2 ounces) finely shredded Romano cheese
1/2 cup chopped Vidalia onion
1/4 cup minced fresh basil
4 large boned chicken breast halves with skin
4 bacon slices
1 large egg
1 cup milk
1 cup all-purpose baking mix
2 teaspoons Creole seasoning
1 teaspoon black pepper
Canola oil
Roasted Red Pepper-and-Vidalia Onion Gravy
Stir together first 5 ingredients in a medium bowl. Set aside.
Place chicken, skin side down, between 2 sheets of heavy-duty plastic wrap; flatten to 1/4-inch thickness, using a mallet or rolling pin.
Spread one-fourth of cream cheese mixture on skinless side of each chicken breast half; top with 1 piece of bacon. Roll up chicken, jellyroll fashion, lifting skin and tucking roll under skin.
Whisk together egg and milk in a bowl. Combine baking mix, Creole seasoning, and pepper in a shallow dish. Dip chicken rolls in egg mixture; dredge in baking mix mixture.
Pour oil to depth of 2 inches in a large skillet; heat to 350°. Fry chicken rolls, in batches, 10 to 12 minutes or until dark brown and done, turning chicken rolls often. Drain on a wire rack over paper towels.
Spoon 1/4 cup Roasted Red Pepper-and-Vidalia Onion Gravy on each of 4 individual serving plates; top with 1 chicken roll. Drizzle with remaining gravy.
Yield: Makes 4 servings

go to: www.topsecretrecipe.com and search for KFC. Somewhere on the site ( I think)is the recipe for KFC chicken. you have to pay for it, but its well worth it. You can do this for Subway, McDonalds, Wendy's and other places as well.

nothing will EVER be as good as kfc's secret recipie... the nearest i have ever got to it.. is asda's southern fried chicken breasts...pack of 4...
