I'm baking cookies right now and the first batch i took out of the oven were very thin, flat, and greasy. What can I do to make them more fluffy but yet be chewy, know what I mean?

i was told that you have to use real butter, and you might want to reconsider your baking time.

also, make sure you use baking powder, not baking soda (lame i know, but it can happen....)

here:

8 T butter
1 heaping and packed cup of brown sugar

cream together

add 2 eggs and a splash of vanilla

sift together

2 cups of flour,
1 tsp baking soda
1 tsp baking powder
1 tsp salt

mix together
mix in:
1 1/2 cups of oats
1 cup nuts (pecans, almonds, walnuts.... anything or not if yu dom't want them)
1 cup chocolate ships

bake 13 minutes at 350˚ F or 190˚ C until litely browned

this is really good, but just throw everything in and don't be too precisxe about the measurements, for some reason it tastes better that way.

I agree with buffy's answer to use real butter, also check the baking time and maybe you need more flour. The batter should be nice and firm (not too firm) aand leave them in the over for approx 10-12 minutes then check if the sides are brown, they are then usually nice and fluffy and chewy ;-) good luck.

Use dark brown sugar instead of light drown sugar and make sure you use butter not margarine at room temperature do not melt the butter previously to using.

Also you might try using parchment paper on your cookie sheets and lowering the temperature by 25 degrees and shorterned the cooking time by say 3 minutes as cookies continue to cook as long as they are on the pan even though they are out of the oven.

Use one teasponn of baking soda & one teaspoon of baking powder. Use one stick of margerine & one stick of butter.. Chill the dough one hour before baking.

make sure you rub the flour with the butter, cut in cubes and not melted.
