Roast Vegetable Sald
6 medium sized potatoes
2 kumara
4 medium carrots
3-4 red onions
Optional:
10 yams if in season
1-2 parsnips
1 tsp each of ground cumin, paprika, turmeric, coarse salt and cracked pepper
1/2 cup olive oil
Scrub the potatoes and kumara and cut into 2cm cubes. Wash the carrots and parsnips and cut into slices of about 1cm thickness. Clean the yams and leave whole. Peel the onions and cut into quarters.
Place all vegetables in a large bowl and sprinkle with 1/2 cup olive oil, ground cumin, paprika, salt, cracked pepper and turmeric. Shake the bowl carefully until the vegetables are evenly coated with spices.
Place everything into a roasting dish. Bake in the preheated oven at 200' C for about 35-40 minutes or until crisp.
Serves 4-6.
