I think that if the bride is close to the groom's father, then of course she can do the father-daughter dance with him. You can also dance with a brother, or...your son.

Any one the bride sees fit can take that place! It's your wedding sweet heart compose it the way you want it. A brother, grooms father, grandfather, anyone really! Often if the mother was the one to raise her she will take her place depending on how close they are.
It is really up to you and who you think would be fitting.
in your case, seeing as your son is giving you away, I would go with him!

You don't have to do a father-daughter dance. At my wedding I had one scheduled, but was extremely pissed off at my dad that day so I cancelled it at the last moment. It didn't affect anything - no one even noticed.
