We did this last semester in an Art for Children class at SFSU.
Gather your paper- standard printer paper works well. Fold them in half. Use two pieces of cardboard for cover backbone. Cut them to desired size and lay flat on table. figure out which side of leather you want as cover. Turn the side you choose backwards and place cardboard on back. Make sure it's centered and the using glue gun glue them to leather. Place paper for pages on leather and sew the with needle and strong thread through leather to make binding. Make sure you're sewing in the crease of the folded paper. Tie knot in back and you can add beads or a longer piece of scrap leather to make a sort of page mark. It's tricky but trial and error makes it come out looking the way you want.
Good Luck

its would be to much to write. I know there are lots of books on binding though. My school teaches a book making class and people I know have taken it and loved it. I haven't, but I know the info is out there. check amazon!
