You can bring a great deal of things. If it's for a date you can buy a really cool basket that comes with all the dishes you need. All you need to do is add the food and a blanket.
I bring wine, Italian bread, cheese, crackers, grapes (any other fruit that is easy to eat and not messy or needs too much work) I usually bring sliced meat like turkey, and some Italian cuts. Also don't forget desert. Make sure it will keep and not melt. It's not alot but enough to snack on and if your still hungry it give you a great opportunity to ask her to dinner....

Try to find out what her favorite food is and if its something that can easily be included in the picnic then bring it too! Also bring a cd player with some great music.

Get a nice blanket and radio/cd player. You might need some bug repellant and yard guard for insects. Something very cold to drink, light foods like sandwhiches, fruits, salad (without onions!)and some kind of dessert like frosted cookies, brownies or pastry. Anything that won't spoil unrefrigerated for hours. Have nice paper plates, cups and plastic spoons & forks. Don't forget nice paper napkins not that .99 crap! Put stuff in resealable containers or have colored Saran Wrap so bugs won't land on the food.

I'd bring a nice variety of rich foods and red wine. I'd not plan on making an actual meal out of it, but rather a nice taste of lots of different treats. cheesez and cold cuts on crackers go nicely with wine. I'd also bring some fruit and some dessert :P It would help a lot of you brought her something she likes. You might ask her or be sneaky and ask one of her friends, but careful! they might spill the beans!
I think it would be really cool if you got one of your friends to help you.. make it a surprise and add a little mystery by going on a walk with her and 'discovering' the picnic basket :P

Peanut Butter and Jelly Sandwhiches, chips and some drink. Have some flowers in the basket and an extra blanket for her to get warm in.
I think that's very sweet of you to do and I believe simple is the way to go!
