2 to 3 cloves garlic
1 can garbanzo beans (chickpeas), drained and liquid reserved
2 to 3 tablespoons smooth peanut butter or Tahini
A handful fresh parsley leaves
1 lemon, zested and juiced
Pinch freshly ground black pepper
Pinch kosher salt
1/3 cup extra-virgin olive oil

Chop the garlic finely . Add the beans and 1/2 of the reserved liquid and process finely or to desired consistency. Add the peanut butter, parsley, lemon zest and juice, black pepper, and salt. Process until it forms a paste. Drizzle in the olive oil and process until it reaches the consistency of mayonnaise.

This basic hummus recipe calls for using canned garbanzo beans. I've made hummus using dried beans, soaking them, cooking them, etc. but the results just weren't as good. The canned beans actually mash up pretty well.

4 garlic cloves, minced and then mashed
2 15-oz cans of garbanzo beans (chickpeas), drained and rinsed
2/3 cup of tahini (roasted, not raw)
1/3 cup freshly squeezed lemon juice
1/2 cup water
1/4 cup olive oil
1/2 teaspoon of salt
Pine nuts (toasted) and parsley (chopped) for garnish

In a food processor, combine the mashed garlic, garbanzo beans, tahini, lemon juice, 1/2 cup water, and olive oil. Process until smooth. Add salt, starting at a half a teaspoon, to taste.

Spoon into serving dish and sprinkle with toasted pine nuts and chopped parsley.

Serve with crackers, raw dip vegetables such as carrots or celery, or with pita bread. You can cut the pita bread into thin triangles, brush with olive oil and toast for 10 minutes in a 400°F oven to make pita chips with which to serve the hummus.

Easy recipe: 1can of garbanzo beans drained, 2 tbsp Olive oil, 3 tbsp tahini paste, 3 cloves fresh garlic, 1/2 lemon juiced, 1tsp salt blend all ingredients in a food processor until smooth add more lemon or salt to desired taste. I also sometimes add a small amount of yogurt to smooth it all out. Good Luck

Throw in a food processor---

2 cans garbanzo beans, drained
a bunch of fresh garlic - I use about 8 cloves
about 1/3 cup lemon juice
about 2 tsp salt (I use sea salt)
about 1/2 c of tahini (sesame seed paste)
about 1/2 c olive oil


blend it all together and adjust the ingredients for your taste. I usually add more tahini and olive oil than above.

Avocado Salad-Hummus Pita:

Hummus
4 pita bread rounds, halved
Avocado Salad
Romaine lettuce leaves
Tomato slices
Alfalfa sprouts (optional)

Spread 1/4 cup of Hummus inside each pita half. Spoon Avocado Salad evenly into each half. Add lettuce, tomato, and, if desired, sprouts. Serve immediately.

Yield: Makes 8 servings

Chick Peas
Tahini
1 tomato
Olive oil
Lime juice
Basil

Put chick peas in a blender or food processor and put on high...start adding tahini. When it is about peanut butter consistancy add the tomato and lime juice and olive oil until it is your favorite consistancy add basil to taste. Done. Serve with pitas.

HUMMUS

2 Tbsp. fresh lemon juice
5 Tbsp. sesame oil (or us another type oil and add sesame seeds)
1 large clove garlic
1 (16oz) can chick-peas, drained (or 1-2/3 cups cooked, drained chick-peas)
Salt and freshly ground black pepper to taste
1/4 cup chopped parsley

combine lemon juice, sesame oil, garlic, chick-peas, and salt and pepper in blender or food processor with steel blade.
Blend or process until smooth. Spon into serving dish and sprinkle with chopped parsley. Serve with pita bread wedges or plain crackers.

You can add chopped olive,roasted peppers what ever you want.
