I really specifically was looking for Missouri wines.

There are so many sites out there that list different pairings. Here is a good one on an event going on that involves pairing in the missouri wine trails, and another that shows how to pair wines with diffent foods.

Missouri makes wine?

The first rule of pairing up wine with food is that you should choose a wine you like.

The general rule is if the food has a stronger flavor, the wine should. If the food has a lighter, more delecate flavor, the wine should as well.

Everything else is quite suspect. Often high end wine restaurants will offer selections of wines that are 'perfectly matched' to the entre'. Well- that's one way to sell a slightly more expensive wine... or an extra glass of wine.

Unless you're a true oenophile, all this subtle wine pairing is a bunch of BS. If the wine is heavy, it will overpower light foods. If the wine is light, it could get overpowered by strong foods- so find a balance.

Frankly with a steak or a nice piece of fish- beer goes surprisingly well. Especially with seafood. Yum!
