In addition to the many marinade recipes you'll likely get, try using a "dry rub" sometime for a slightly different result. You need to get kosher salt for this (yeah, I know, kosher salt on pork, har har har) because of the shape of the crystals. Here's a simple one:

Basic pork dry rub for a 10-pack of pork loin chops

1 tablespoon kosher salt
1 teaspoon powdered garlic
1/2 teaspoon each powdered sage, cumin and paprika
Freshly ground black pepper to taste
1/4 teaspoon ground allspice

Mix all ingredients in a bowl. Lay your pork chops on a flat surface and sprinkle about half of the dry rub over them, then turn them and sprinkle the other half on the other side. Let them rest outside of the refrigerator for about 15 minutes.

Cook as usual -- about 12 minutes per inch of thickness, in four even turns (that is, 3 min on side A, 3 min on B, then 3 min on A again and 3 min on B again).

Alternatively, what we did Wednesday night was put this dry rub into about 3/4 cup of flour, then tossed the pork chops into the flour and cooked them in butter (same cooking technique -- 3 min on a side, four times -- these were inch-thick, juicy pork tenderloin chops, like little pork rib-eyes, mmmmm). When the meat was done we removed it and deglazed the pan with a little more butter and some chicken stock to make a quick gravy. It was excellent over the couscous we served as the side dish; it would have been even better over mashed potatoes...

kc masterpiece makes a new line of marinades... i love the "caribbean jerk" - it is sweet, spicy - has pineapple, cayenne... very "islandish" - i like to lay my chops out, pour this marinade on top, then take a fork and just act like you're tenderizing the chops to really get the marinade down in the chop, then put them in the fridge for about 45 mins, throw them on the grill, cook until done to your likeness, voila!! great great dish!!!

i personally don't marinate pork
lightly salt it before cooking
then use a good chutney to dress it when serving(pawpaw & mango)
you'll be glad you tried it like this
p.s.cook it slow and long medium heat
no added oil or fat-just lightly grease pan
