I just had some great bacon.
Not that cheap long stuff, I had the shorter trimmed stuff.
Why did it taste better? The trimmings were the same as the middle.
It's early in the morning (for me). I may be still tired and confused.

It's called center cut bacon, and it's better because the center has mostly meat and little fat.

Perhaps their hogs/pigs were fed differently than the cheaper stuff?? I find that the cheap stuff is very flat tasting compared with the local bacon I buy at a local meat market.....

Maybe it also had more fat to give the meat part more flavor? Maybe you just had a clear nose this morning??

I don't know what the length would have to do with it!?
