Shepards Pie is always a great dinner.
To make a medium size pot all you need is:
1 lbs ground hamburger
8 large potatoes (or instant mashed potatoes)
2 cups shredded chedder cheese
1 can creamed corn
Peel and quater potatoes, boil for mashed potatoes(or use instant.)
To make homeade mashed potatoes I always use
1 cup of sour cream
1/4 cup butter,
1/4 cup milk
When potatoes are cooked (do not over cook or they may come out watery) add butter, sour cream, milk, seasonings, and cheese and mash until smooth.
Brown the hamburger meat with salt and pepper. (you can do this while the potatoes are boiling)
Preheat oven to 350 or 400 degrees
When both are complete, put meat in the pot covering bottom, layer can of creamed corn over meat, layer mashed potatoes on top and top with a little bit of shredded cheese. Cover and bake for 30 min or until hot all the way through.
If using instant potatoes, you can still use sour cream and seasonings to dress them up a bit.

I do not have a lot of quick dinner ideas but sometimes I just look at what is in my freezer or pantry and go from there! I have cooked some smoke sausage and added in some stir fry veggies and put them on hot dog buns and grated cheese over them.. sloppy joes or manwiches are always quick.... chicken salad or tuna salad sandwiches are quick also.... hamburgers/cheeseburgers are quick grilled cheese and cup of soup grilled chicken salad or cube up your grilled chicken and add stir fry veggies and serve over rice.... bagel pizzas are quick and easy.....take and split a bagel and add pizza sauce to each side. Top with your fav toppings and pizza cheese.....pop into a toaster oven or your regular oven until the cheese is brown and bubbly..

Birds Eye has these new meals in bags that may be just vegetables, vegetables with chicken or beef, or that also include pasta. I've recently discovered them.
They take minutes to cook in the microwave. You can do one of the ones that has chicken, beef or chicken and shrimp and put them over angel-hair pasta or rice if you want. They aren't loaded with meat, so you could do up some steak strips or chicken strips in a skillet and add it to the Voila meal. Since you cook that in the microwave (like 6 minutes, stir, 6 more minutes) in a casserole dish; all you have to do is do any supplemental protein (ahead of time if you want) in a skillet, and maybe spend 4 minutes cooking angel-hair pasta.
When the casserole dish is finished you throw in any extras you've prepared and serve a plate of the pasta.

why not try some casseroles, and make them up a few days in advance. Or try some chicken, marinating in a teriyaki sauce overnight, and then bake at 350 F for about 1/2 hour, serve with a steamed rice , and a nice tossed salad, Voila! a beautiful dinner.

Chop a couple stalks of celery, a couple carrots,and a few cloves of garlic. Dice up 2 chicken breast. Quick brown the chicken in the bottom of your stock pot.Throw in all other ingredients plus salt and pepper. Add 2 cans of chicken broth. simmer till delicious then add egg noodles,simmer till noodles are soft. Now you have home made chicken noodle soup.It takes 5 minutes and you only have one pot,a knife,spoon and a cutting board to wash. This is a great question. I look forward to reading your answers,

Do you like fish? My husband is Brazilian ... this Brazilian style dish tastes like you slaved over the stove all day!
1 package imitation crab legs or one pound fish (preferably fresh)
1 can tomato sauce (16 ounce)
1 onion sliced thin
juice of one lemon
1 bunch cilantro, chopped
In a heavy pot, saute the onion in a little bit of olive oil until translucent. Add the can of tomato sauce, the lemon juice, the cilantro and the fish. Cover and simmer for twenty minutes. Serve over a bed of rice. White wine on the side!!!
Bon appetito.
This recipe is AWESOME!!! and if it is only for the two of you, you will have leftovers. Serves four. You really can use any kind of fish, even shrimp.

Lemon Chicken Pita Burgers with Spiced Yogurt Sauce:
You can also serve the chicken patties with couscous tossed with golden raisins.
1/2 cup chopped green onions
1/3 cup Italian-seasoned breadcrumbs
1 tablespoon Moroccan or Greek seasoning blend
1/2 teaspoon coarsely ground black pepper
2 large egg whites, lightly beaten
1 pound ground chicken
2 teaspoons grated lemon rind, divided
1 tablespoon olive oil
1/2 cup plain low-fat yogurt
1 1/2 teaspoons chopped fresh oregano
4 (6-inch) pitas, cut in half
2 cups shredded lettuce
1/2 cup diced tomato
Combine first 6 ingredients; add 1 teaspoon rind, stirring well. Divide mixture into 8 equal portions, shaping each into 1/4-inch-thick oval patties.
Heat oil in a large nonstick skillet over medium-high heat. Add patties; cook 2 minutes on each side or until browned. Cover, reduce heat to medium, and cook 4 minutes.
Combine remaining 1 teaspoon rind, yogurt, and oregano, stirring well. Fill each pita half with 1 patty, 1 tablespoon yogurt mixture, 1/4 cup lettuce, and 1 tablespoon tomato.

ONE-SKILLET CHICKEN STEW
2 (16-oz ) cans chicken broth
5 tablespoons flour
8 ounces skinless, boneless chicken breasts, cut into bite-sized pieces
2 tbsp diced redpepper or pimento
1 medium onion, chopped ( u can use pre chopped frozen)
10 baby carrots, cut in half
2 stalks celery, thinly (optional , I don't usually like celery.)
1 clove garlic minced, or 1 teaspoon bottled chopped garlic
2 tbsp chopped parsley
2 cups shell or gnocchi style pasta, dry
1. add the broth and flour to pot or lg skillet and whisk together.
2 Add the chicken, peppers, onions, carrots, celery, garlic, parsley, and pasta, and any salt you want. cook for 12 minuts after boiling starts, or until the pasta is cooked.
Tip: To make this a soup instead of a stew, add another can of broth. for extra seasonings, add 1 tblsespoon chopped fresh thyme or 1/2 tbsp dried and one 2 inch sprig rosemary (or 1 teaspoon finely chopped) and stir in a chicken bouillon cube. For those who like it, a dash of sweet or dry sherry along with the seasonings makes this extra good.
