I just made some homemade Cheddar English muffins. What should I use them for?
English Muffin Pizza's are good, but I had those recently. What else is there?

This basic recipe lends itself to a thousand variations. Experiment with different apples, cheeses, such as Edam or Aged White Cheddar and perhaps a whole wheat English Muffin. A smear of herb and lemon butter and you've gone from basic to extraordinary! It is a perfect after school (or after work) snack.

try... 'English Muffin with Apple and Cheddar Cheese':

(Srvs 1)

1 English muffin, split
1/2 apple, thinly sliced
6 tablespoons grated cheddar cheese

1. Place English muffin, cut side up in a toasted oven or on a baking sheet under the broiler, and toast until lightly browned.

2. Top each muffin half with half of the apple and half of the cheese. Broil until cheese is melted.

Toast them and make bacon-and-tomato sandwiches. Would be AWESOME with cheddar muffins, maybe with just a dab of Dijon mustard on the bacon side. It'd be great with any of the styles of bacon I'm familiar with -- American bacon (belly slab type) cooked crispy and delicious, English cottage or rasher bacon (sort of a cured pork prime rib) left a little chewy and juicy, or Canadian bacon (thinly sliced pork loin) just heated through and lightly caramelized around the edges.

And I second the egg-butty idea -- beat one egg with salt, pepper and a tablespoon of water, then cook it as for an omelet but when you fold it, fold it up the size of the muffin.

While it's going, toast your muffin, then when the omelet is done, slide it onto the muffin and make a sandwich out of it.

(You can also do this, BTW, with regular bread; when you've got the egg between the slices of bread, add a dab of butter to the omelet pan and grill both sides of the bread till they're golden-brown. Prepared exactly as described, it's my son's favorite food, but I like to add a slice of provolone cheese before grilling, so the cheese melts... mmmm....)

Easy Eggs Benedict

(4 servings)

* 4 round slices Louis Rich Turkey Ham (or similar)
* 4 large eggs -- poached
* 2 English muffins -- split and toasted
* 1/4 cup plain lowfat yogurt
* 1/4 cup light mayonnaise
* 1 tsp. Mustard

Heat turkey ham slices in skillet on medium heat 5 minutes, turning occasionally.

Mix yogurt, mayo and mustard in small saucepan. Cook and stir on low heat 5 minutes or until thoroughly heated.

Place 1 heated turkey ham slice and 1 poached egg on each English muffin half; top with sauce.
