Bacterial infections account for 67% of all food poisoning in the U.S. The 3 basic bacteria types responsible for most food-related illnesses are Staphylococcus,Colostrum perfringens and Salmonella.
Staph transfers to foods by humans during perep. Clostridium perfringens and salmonella can be on the food or transferred to the food during prep. At low levels these bacteria do not cause trouble. under the right conditions, they can multiply to dangerous levels with a few hours.
Factors contributing to bacterial growth and possible food poisoning are temperature,time, food type and moisture. Bacteria need all these factors to grow. Temps between 40F and 140 F permit fast bacterial growth. If food is kept for 3-4 hour4s in this temp range the number of bacteria present could cause illness. Low acids foods such as meat, cooked vegies and egg dishes are particularly risky. Amount of moisture available will also affect microbial activity.

Don't eat it! It's got dairy in it, and that many hours left out of the refrigerator will make you sick. I know it seems like a waste, but really, if you eat it (and your kids eat it), it sure won't be worth it then. Many people say sour cream is already "sour" but there were steps taken to get it to that state and now your casserole won't be sour but rancid. Don't eat it!

Any moist food left uncovered is going to get contaminated by airborne and flyborne bacteria and mould spores. You will not necessarily get enough bad stuff to do any harm on any particular night, but, if you do it often, it will only be a matter of time before someone does get sick.

Dairy product/meal with dairy out of temperature for over four hours?
If your kitchen were a resturaunt, it would be a first class violation to have that anywhere but in the garbage.

Throw it out--anything left out over night is potentially deadly--If it's out more than 2 hours toss it.

hi
well, happened to me too once.
the meal was too nice and a lot to throw out
when i reheated it, i boiled it for few min on stove and never got sick after, neither anyone else.
it was cooked so its not a prob, sour cream wasnt fresh in it right.

Ehk, I think I'd pitch it. Especially if it had any meat in it, but I'm sure the sour cream is spoiled (if that's possible). I'd say better safe than sorry.

yes throw it out... anything sitting out between 40-140 degress for more that 2 hours with dairy needs thrown out!! I hope you feel better soon!
