its a fluffy really sweet dessert that we used to have for special holidays, made in different colors.....green and red for christmas and pastel colors for easter.

Is it more like a candy? I found a few recipes, but here's a link that got higher ratings

Sea Foam
* 2 cups white sugar
* 1/2 cup water
* 1/8 teaspoon salt
* 1/8 teaspoon cream of tartar
* 2 egg whites
* 1 teaspoon vanilla extract

DIRECTIONS:

1. In a medium pot, combine sugar, water, salt and cream of tarter. Cover mixture and let boil 5 minutes.
2. Uncover the pot after the 5 minutes of boiling have elapsed, wipe the sides of the pot with a damp cloth. Continue boiling until the mixture reaches the firm ball stage.
3. Pour the mixture over stiffly beaten egg whites, and stir in vanilla. Continue beating until the candy holds its shape when dropped from a spoon. Drop the mixture by spoonfuls onto wax paper, let cool.

Oh my gramma used to make seafoam too!
This was a chocolate covered candy though so dont sound like what your looking for.... but I know when she made it you had to be very careful it didnt "fall". It was very light & airy.

You said your was a dessert... so not sure if I could help you.
If its a candy it sounds like what we call divinity.

Seafoam Salad

1 large can pear pieces, drain juice and save
2 (3 oz.) pkg. lime jello
1 8oz. cream cheese
4 T. milk
1 (9 oz.) carton Cool-Whip (or less)

Drain pears. Heat juice to boiling & pour over jello to dissolve. Cool until partially set. Combine cheese and milk. Beat til smooth. Stir in jello. Fold in pears and cool whip. Pour into 9x13, chill til set.

Green Goddess Gelatin Salad

1 (28 oz.) can crushed pineapple, drained, reserve juice
1 (8 oz.) pkg. cream cheese, softened
2 envelopes lime Jello
1 pint heavy whipping cream
2 tbs. cider vinegar

Place pineapple in large bowl; set aside. In meduim bowl, add Jello powder, 2 cups boiling water and stir until dissolved. Add 1 cup cold water and 1 cup reserved pineapple juice. Add vinegar. Let pre-set in freezer for a few minutes. With electric mixer, combine cream cheese and crushed pineapple. Add Jello mixture; mix until smooth. In separate bowl, whip the cream until it holds soft peaks. Gently fold whipped cream into Jello mixture. Transfer to a pretty bowl and refrigerate at least 4 hours or until set, preferably overnight.

Big Orange Salad

1 large can crushed pineapple, drained
1 large package orange Jell-o
1 large frozen Cool Whip
2 cups miniature marshmallows
1 pound carton cottage cheese

Mix pineapple and dry Jell-o. Stir until dissolved. Add marshmallows and cottage cheese. Fold in cool whip. Place in large bowl or 9x13" pan. Refrigerate for at least 2 hours.
