de-seed the chillies and grind them into the yogurt with some black pepper and lemon juice. char grill the prawns, ball the melon (I hope to the gods its not watermelon), chop up the goats cheese toss it all together with some fresh coriander...and there you go.... a mass of textures and flavours

Make a sweet chilli dipping sauce, chop your chillies with seeds and all, put about 10 tablespoons of sugar in a pan and slowly bring to just about boiling stirring all the time, add some hot water very carefully stir in the chopped chillies if it's too thick add more water.simmer for 5min till the chilli is cooked then put aside to cool.
If the prawns are raw, clean and take out the intestine tract, dip in some flower then into some batter made with fizzy water and flour and deep fry for about 30 seconds or till cooked.
Goats cheese is great grilled and served with honey and grilled walnuts chopped and sprinkled on top. Great as a snack on a Bagel.
Be careful to keep an eye on the cheese as it melts quickly and makes a mess. Turn it once serve with a little green salad.
Chop the melon , mix with some yoghurt and you've got desert too! Add some warmed raisins if you got them. MMmmmm

Soften the goat cheese, mix the chilies in for heat and stuff the prawns with the cheese and chillies mixture. Bake or pan fry with a little breading on the prawns. To cool the heat of the stuffed prawns, serve bit size pieces of the melon and a yogurt dip. My favorite and what I like to make is vanilla yogurt, honey and lime juice.

Cut melon into cubes or balls. Marinate cooked prawns in little yogurt with chopped chili for few hours. Mix with melon. Make dressing from yogurt and goats cheese - just mix them. Place prawns and melon on bed of shredded lettuce. Spoon over dressing. Sprinkle with little finely chopped chili. Serve with warm whole meal rolls and well chilled oaked white wine.

YUMMY!! lucky guy. Yogurt, diced cucumber, garam masala = dressing for fruit. (sour cream, brown sugar, cinnamon is super on fruit - no proportions, just to taste)
prawns with hot melted butter and/or lemon or lime
chilies and goat cheese on anything!!

How about grilled goats cheese and mango toasts?
slice some bread, spread a bit of butter, put on slices of cheese and mango, and grill it in the oven. u can spice the mango with chilly if it suits the cheese.
