etiquette says spit it out and take a sip of a neutral fluid in between to give your taste bud a break and get them ready for the next wine. At least in Europe.

It is very rare to swallow during wine tastings. It is considered bad taste and the whole point is to appreciate the bouquet of the wine and not to see how well it goes down.
Nevertheless when we are talking about exceptional wines it would be a shame not to swallow so use your discretion.

|Use your common sense - if the wine is nice swallow, if not you have the ideal opportunity to spit it out. I once fell ON to a bus after a wine tasting in Majorca. Don't do that!!! Just a thought, watch what others do if you want. Anyway, don't those wine buffs irritate, going on about smelling cheese, rotton pears, chocolate, and so on. Just get it down you and enjoy.

if it's wine you're talking by all means spit.
The spitting is done to clear the mouth and taste buds of the taste of the previous wine. It sticks in your mouth if you swallow
if it's the other thing by all means swallow

Swallow. For all the grandeur and elegance attached to wine, it is no better than beer, Scotch, kahlua or any other type of alcohol. It is gross to spit it. People at beer festivals don't go around belching, farting and spitting.

When its a social wine tasting they usually give you such small amounts of the wine you might as well swallow.
