The Greek Kalamata olives are my favourite and are not as salty as the black ones but have more flavour than the green ones. Black olives are good for putting into cooked food. In some deli counters you can get the Kalamata olives in oil with garlic, chilli and peppers. They are lovely. Never get olives in brine - yuck!

Tasting olive oil, just like extra virgin, is usually used sa salad dressing, vinaigrettes and dipping bread. If you are looking to cook with it, I recommend regular olive oil. I use the same brand to cook my food.

go here
http://www.internationaloliveoil.org/
it is the international olive oil council
lots of info on table olives and different types of olives from around the world
in the USA there is
California Olive Oil Council
http://www.cooc.com/
So when you go to the store you will have better knowledge on the types of olives, the best place to buy them is at a gourmet market if you have on in your area...

Just go to Supermarket and you can get really nice ones quite cheap in a jar. I think the green ones taste much better than the black ones (their a bit bitter) and the ones I like best are stuffed with pimento (red veg in the middle). You can get big ones in jars stuffed with feta cheese to, they taste nice!

try Kalamata olives. You can either buy them bottled, or, if you are lucky & have a good market locally, get them loose.
