Is it reasonable that it would destroy her? Is she just dramatic and hysterical or is she sensible but with personality and looks that at her current age she would have difficulty finding someone else with?

Is it reasonable for you to leave her? How old is she? Have you been together a long time? Have you taken the best years of her life, or the last few years of the period when she would still have had a good chance of attracting another mate? Could/should you have left her sooner? Did you make any her promises, implicit or explicit? How would life be for you if you settled down with her? Are you sure you can do better?

These are just some of the questions you should be asking yourself first. However if you're going to do it anyway: First give her a sign that it's coming. When you do it, do it in person. Give her a clear explanation (whether it is fair or not, whether it makes you look a complete asshole or not, make sure it's something she can get her head round). Hear her out, give her a chance to ask questions. Don't waver, be firm and consistent. Don't cut her off completely immediately (be prepared for a couple of really stressful weeks), but limit contact with her progressively until she stops needing/wanting contact. If this doesn't happen naturally within a reasonable period (a few weeks) you'll need to refuse contact. It sounds like she's too deep into this to be able to cope with a platonic relationship if you split up.
