I think Polish/polish must be the right answer.
It's true that "the" has two different pronunciations, but the capitalization does not change with pronunciation. (The pronunciation of "the" depends on what the following sound is and the amount of emphasis the speaker is using.)
For me the "slough" that is the bog-type thing is pronounced the same as "slew" (i.e. killed).
And Martha Stewart pronounces the h in "herb" (the plant).

There's also 'Slough' - a place in England, pronounced to rhyme with 'cow', and 'slough' - pronounced to rhyme with 'rough' and meaning 'to be cast off / shed'. (But it can also be pronounced to rhyme with 'cow' without the capital S, then it means a slimy bog-type thing..! Still, I had to mention it!!! Just couldn't resist..!)

"Herb" or "herb." If it's a guy's name you pronounce the "H" and if it is a plant, the "H" is silent.
