Have them start a class newspaper...teach them the basics of informative writing... answering the Who, What, Where, Why, How, and to What extent questions... assign a sports writer, an events writer, a study help writer... and an person who interviews someone interesting... it will be a group project with individual assignments that they can produce and take home or mail to their family and friends. Don't forget a photographer!! Most desktop publishing softwares will let you put together a nice little newspaper that you can produce in-house.
